What can I make instead of a roast dinner for family on Easter Sunday?

I usually invite family over for Easter Sunday and do a roast but I find it quite stressful and it keeps me in the kitchen missing out on everything.

i want to invite everyone over but want to make life a little easier, what can I make that would suit a non veg eater, a healthy eater, a vegan and a several meat eaters?

any help would be great please!

Braised oxtail for the meat eaters and a vegetable tagine for everyone else. Keep it as close to one-pot (albeit two meals) as possible and as hands-off as possible.

I always do a buffet. Lots of salads, home made bread, big bowl of garlic potatoes and the main courses. Pickles and chutneys.

My go to Beef stroganoff for meat eaters &
mushroom green pepper etc vegetarian stroganoff- I just leave out the cream if for a vegan.

Or I make a beef/lamb tagine and then another with butternut squash and sweet potato for the vegans. But leave out the honey. Not quite the same but it’s ok.

I would do an Indian type help yourself. I love the stuff in the Dishoom and Mowgli cook books. A lentil Dahl, a ruby chicken curry, behl salad, flat breads, rice, angry bird. You can do loads in advance.

I bought a half price whole salmon from Morrisons and going to do that with coleslaw, potato salad and a big mixed salad. With some baguettes and may be some brie. Might do some sausages and fried onion in rolls too.

A tray bake of chicken drumsticks with lemon and herbs, a large pot of ratatouille which can be made beforehand and just reheated on the day, microwave rice or couscous, Parmentier potatoes.
The vegan is catered for with rice and ratatouille, and the non vegetable eater just has chicken and rice. Much of the prep can be done ahead so you're not stuck in the kitchen all the time.
You could do strawberries and Swedish glacé for the pudding, so the vegan is catered for.

A ham in the slow cooker, roast potatoes (par boil in advance) cauliflower cheese (made in advance with dairy free milk and cheese for the vegans), veg to steam and Yorkshire puddings. Sort of a roast dinner whilst ticking off dietary requirements.

We have a mixture of vegans, vegetarians and meat eaters. I'm making one lamb moussaka and one vegan one - I'll make a start on Friday and they can wait in the fridge and go in the oven on Sunday. Served with Greek salad.

The following weekend I will be going for a pub Sunday roast with DH and I will really enjoy it!
