What food can we have on holiday?

Im going away on Monday with sister, BIL, and two nephews (5 year old and baby). My dad will join us on Tuesday.

I’m trying to plan for the food but getting a bit stuck. We’ll have pizzas, garlic bread and wedges on the second night and a barbecue on the last night, plus the usual sandwich fillers, bread, crisps etc for lunch and snacks, but what can we have on the first night we’re there?

We’re self catering in a chalet style building with the usual oven, microwave etc you’d expect. Any ideas gratefully received.

What about one of those roast in the bag chickens? They are lush and so easy. Buy whatever sides you like ready make, or just have fries and a bag of salad?

Usually fish or chicken with vegetables. Not sure that’ll be a hit on holiday.

Ooo that might be a good idea. Yes - we want something easy we can just throw together and if we can pick it during the evening even better.

We like to make a curry or spaghetti bol at home then defrost for a day on holiday.
Or chicken fajitas are easy and usually a crowd pleaser

Second roast in the bag chicken!
rare treat, great to pick at, chuck in some salads and a Tupperware of potato salad made earlier, hit baguettes. Yum!
good vanilla ice cream and strawberries for pudding!

Fresh linguine, prawns, chilli, garlic, cherry tomatoes, parsley. Either tenderstem broccoli or a salad on the side. 10 mins start to finish. Simply and delicious.

I’d take a big pot of chilli, to heat up on arrival, serve with tacos, or French sticks or spaghetti. Green salad in a bag with dressing separate. Perfect holiday food.

If you get a MN chicken you'll have the added bonus that it will feed all of you for the entire holiday, including sandwiches, and you won't need to worry about other meals.

If you don't mind dealing with the mess then the chicken roasted in a bag idea is great.

I refuse to do a lot of cooking and washing/clearing up on holiday, so we always arrange a click and collect order from the nearest supermarket to where we are going, and pick up a load of ready meals. I would probably have pizza and salad the first day. You can get extra toppings for the pizzas if you want. I always buy a bag of ready chopped onion as self catering places rarely have a good chopping board or a properly sharp knife, plus I can't be faffed to have to chop it up and clear up afterwards. If you do that make sure you have a properly air tight container to put it in though or it will stink out the fridge.
