Hello,

I'm hosting some vegan friends for lunch next week and I'd like to make a tart as the centerpiece. Can anyone please recommend me a recipe?

Thanks

I've never made one but I'd like a pastry base (suitable fat like a vegetable solid block) which would be crisp when cooked then a layer of a basil oregano garlic onions olive oil tomato sauce cooked till thickened. Then pile in roasted peppers mushrooms courgettes olives . A few rocket leaves to garnish

Jus roll ready made pastry is vegan if that makes it easier

Definitely makes life easier, I'd get the puff pastry but they do shortcrust as well

I have found that all mainstream ready rolled pastry from supermarkets is actually vegan! Incredible, I think. I made a roasted Mediterranean vegetable tart with vegan cheeze for my brother-in-law when he came to stay. It tasted fabulous but the vegan cheeze sprinkled on top was a mistake... It doesn't melt! I didn't know. So don't put cheeze on top. It maybe OK underneath, or it may be possible to get a soft cheese-alike to put underneath. I think some tahini spread on the pastry would be good too.

@murasaki if I can get ready made pastry then I will probably revert to one of my favourite tomato tarts. Do you happen to know if vegan feta is any good?

This is what I was going to suggest - many years ago a French friend taught me her tomato tart, which was just proper French all-butter puff (in a round), topped with a schmear of dijon, grated Emmenthal, and sliced overlapping tomatoes. In the oven for 25ish mins et voilà. I've customised it many a time over the years and I think it'd be fine to leave off the Emmenthal. Sometimes I alternate tomatoes and sliced courgette, or add thyme and a bit of balsamic at the end. It'd also be nice with thinly sliced squash and sage.

Sorry, no idea as I'm a confirmed omnivore, it's just the pastry that DP buys as it's available and he's lazy.....

You could do a pissaladiere but with no anchovies. The olives would be fine. No need for fake cheese either.

Hi! I'm vegan, and I think the vegan feta is good and better than other vegan cheeses. It's not as different as normal vegan cheese is to dairy cheese, so it's also less likely to upset omnis in my opinion :)

TheodoraCrumpet · 06/04/2025 23:19

I wouldn't bother with the cheeze stuff. Flora vegan butter is quite good if you want to serve hot vegetables or new potatoes on the side.

Janefx40 · 06/04/2025 23:30

Yes go with Jus Rol. Personally I would steer clear of vegan cheeses as I don’t think many of them are good and it would be a bit of random chance to find a type/brand your guests like. Plus in my view the best way to cook vegan is to celebrate vegetables/natural plant based stuff rather than try to replicate a non-vegan meal. Tomato or roasted veg tart sounds ace!
