Trivial question about salmon

This is trivial but interested in views.

Today I poached a salmon fillet then mixed it with mayo and spring onion to make a sandwich filler. Thing is, all of us are a little unwell right now and none of us will be eating it today.

I would usually say it's fine in the fridge obviously - but would need to be eaten at the latest the day after tomorrow. What do people think would be the limit? 48 hours like that or would you stretch that to a third day so eating it by Wednesday at the latest?

I'm always a '48 hours max in the fridge' person but DH (who is now vegetarian) used to be happy with eating things up to a week and a bit more later so I don't really know if I am unnecessarily cautious!

I’d keep eating it unless it smelled funny but I’ve just eaten out of date sushi today which was 5 hours out of a fridge yesterday so I may not give the best advice 😁

If it was within date when you cooked it, and has been in the fridge since, I'd say 4-5 days would be fine. If you buy pre-cooked salmon it often has a date of a week or more.

The rule is cooked food is good for three days. Though that's often if it's something you're going to reheat. I'd say to leave it for 24 hours is fine, any longer and I'd be making sure it smelt ok. When was the use by date on the salmon? That will play a part in how well it keeps I think.

God I never thought ot look at the use by date. [rookie error] I bought it 2 days ago and its been in the fridge and I felt it needed to be used.

I'll go rummage in the bin

24 hours. The spring onions will be soggy and permeate the whole thing otherwise. Shame you had already added the spring onion, otherwise it could go in the freezer.

I've never put a mayo mix in the freezer. Does it defrost okay?

I think it would have been better to leave the salmon in the fridge then mix it with the mayonnaise and spring onion when you are ready to use it. I think the quality will start to decline after 24 hours, rather than it being unsafe. Although technically, chopping and flaking does slightly increase the risk of food poisoning because bacteria is usually on the outside of foods. That is very much a technicality though! I wouldn’t eat it after 72 hours/3 days.

You can smell when fish is off but as you've mixed it with the mayo etc. I would say 3 days max.

Hmmm... I might make tomorrow my cut off then. I should have frozen it raw. Decision making processes a bit dodge today.

Chef here - officially fish would get 3 days as long as that three days doesn't exceed the use by date, however, I always err on the side of caution with fish and wouldn't prep for more than 2 days. Your biggest problem will be quality I think, soggy spring onions and liquid that's leaked from the fish/onions and made your mayo watery.

Yes. I confess I am irritated about the spring onion inclusion because I suspect my cat would have enjoyed it also otherwise. I'll review tomorrow but I think the bin is going to be the winner here.

I am honestly not that fussed about useby dates, but given all you've said, I would chuck it and chalk this one up to experience. I love salmon usually but wouldn't feel like eating this if I wasn't that well.
