Although personally, as a non-Italian I prefer mine with a bit of cream in it.

Milk? Most Italians and properly authentic Italian restaurants will baulk at the idea that carbonara has cream in it, insisting it should only be bacon (or guanciale to be more precise but pancetta will suffice) eggs and parmesan.

Yep. Although I suspect it depends on which Italian you speak to.

The original is from the end of WWII when the Americans were in Rome and had quantities of bacon, eggs and milk.

Thanks everyone. Friend has just left, she was an ex colleague passing through so yeah it took me by surprise, too! Great evening. I bought some crostini type nibble things & antipasti from local deli then did butternut squash lasagne with a huge mixed salad & focaccia (also deli bought). Lemon posset to finish! You all had great ideas.

Roast chicken always a winner, lasagne, personal fave for me would be risotto.
