Are other sliced deli meats 'healthier' than ham?

I suppose the question is what to I mean by healthier and the answer is... I don't know 😅 I understand that UPF in general is linked to a variety of health concerns, and that processed pork is a particular risk for bowel cancer. So is processed (deli style) chicken a bit better than ham? What about other similar meats? Is cheese even better? Obviously less processed and ideally plant based foods would be the best, but just trying to understand where the line is/how it all stacks up if anyone knows or has any useful links?

I have started buying a small chicken and roasting it when the oven is on. Once it's cold, you can strip it down for sandwiches salads etc, then you can freeze the carcass for stock, too.
Lots of supermarkets do whole roasted chicken and joints, too.
