What are your home cooked everyday dinners? I need ideas.

In need of inspiration. Finding myself cooking the same family meals all the time.
For reference I have DH and Dd7. They eat most things ( obviously the 7 year old would choose plain pasta or pizza margarita daily out if preference!) I don't eat meat but can deal with my own requirements. I'm trying to figure out some alternative options to cook for them which can include meat.

Current regulars are:

Coq au vin,
Boef bourginon
Mushroom risotto,
Baked Ratatouille
Linguine with prawns and tomatoes with rocket
Salmon with sweet chili sauce
Noodles with stir fried vegetables and pressed ( or sometimes steak)
Rigatoni ortalano ( a tomato based sauce with onions aubergines and courgettes)
Jacket potatoes with fillings
Cod loin with baked tomatoes
Occasional macaroni it cauliflower cheese
Bolognese.
Meatball spaghetti

Although there are quite a few options they are just on constant repeat. I'm trying to come up with some other options that are largely unprocessed but additionally don't take an eternity ( it loads if pans and equipment) to cook. Throw me some ideas please.

I was stuck in a rut and looking for something new to make.
I found this creamy mushroom chicken recipe and it's very easy and pretty quick to make.
It's delicious and both kids love it which is a miricle. We have it with rice or mash and vegetables.

Lentil Dahl and rice all cooked in the oven - eaten weekly in this house
Tomato passata and mascarpone pasta bake peanut satay tofoo tofu and veg ‘stirfry’ and rice
a pasta salad made with avocado feta pine nuts tomatoes sundried tomatoes and spinach and watercress - a weekly dish here
baked potatoes stuffed with cheese with beans and salad
bean chilli
lasagne

Marry Me Chicken, I saw a version with Halloumi but haven't tried it

Fajitas either chicken, pork mince or halloumi,
Chicken sharwama
Sausage Pasta
Chicken Parmigiana
Baked Ziti or Lasagna
Pad Thai
Drunken Noodles (a milder version as DD isn't keen on hot)
a variety of curries
lots of stir-fries
Fishcakes
Burger, beef, chicken, halloumi
Pesto pasta with pork, chicken, sausages, halloumi, prawns. I sometimes do it with a cream sauce and tagitelle
Rice and meatball casserole

We’re not veggie but had a lovely paneer curry from hello fresh the other day which I would like to recreate. Other regulars here include sausage and mash or toad in the hole, fajitas, cottage pie, all easy to adapt to veggie.

God I hate meal planning though. Reading all these suggestions thinking they sound great but it’s the thought and prepping that kills me.

I cook meals at home every day of the week.
Since I have to come up with a meal everyday, I draw my inspiration from online recipes, sometimes from some of my cookbooks, and even from MN threads like these.

As examples, last week:
Pasta, tomato, mixed veg, cheese casserole.
Butter chicken, my own adaptation of.
Enchilada casserole made with my own taco spice mix and enchilada sauce, tortillas, homemade refried beans, and cheese always cheese.
Cuban black beans with homemade sofrito over the golden coloured and delicious Mexican rice.
Still in the Cuban mood, arroz con pollo.
Pita pizzas with homemade pizza sauce, sliced leftover sausages, pepperoni, peppers,onions and lots of mozzarella cheese and Parm.

I do random pesto pasta, which is basically any veg I need to use up, plus sometimes tuna or left over meat, with pesto and cream. Always nice.

Oh, haggis, mash and peas. Super quick as haggis can be microwaved in minutes and it's really cheap in Morrisons too!

Mac n cheese
Chicken with mushrooms in white wine and cream sauce (blue cheese optional)
Pasta with sauce made from roasted red peppers and sautéed onions, pureed
Pasta tossed with tinned sardines, capers, and sundried tomatoes
Potatoes au gratin with spinach, cheese, and crumbled bacon layered in

Try The Green Roasting Tin for ideas, there are many others too but that book is all veg or vegan. She has some tart ideas in there too.

It’s actually my version of a roasting tin book one

200g red lentils
tsp each of ginger , cumin, Turmeric and garam masala
slug of oil
finely chopped red onion
2 unpeeled garlic pieces ( having a mind blank of the proper word .. menopause 😂)
1 litre boiling water with half a coconut block melted into it
all in a pot covered tightly with foil for 45mins at 180/200 - stirring halfway through .
squeeze of lime juice and salt with some spinach stirred through to wilt down

To make rice in the oven I use a lidded Pyrex dish - 1 mug of rice to 2 mugs of boiling water and a small chunk of butter on top which should stop the rice sticking -30 mins - I tend to stir after 20 mins to fluff it up

I also make flatbreads - equal parts Greek yoghurt and flour and a sprinkle of nigella seeds - rather than fry them though I also put them in the oven which seems to work

Chicken and vegetables all cooked together in a roasting bag with seasonings and a splash of stock.
Blackened spicy chicken and rice
Pork goulash
Beef stew
Slow cooked belly pork
Chopped up cheese salad (everything you fancy chopped up and thrown into a big individual bowl. Include fruit)
Fry up with everything in it
Fish pie
Cottage pie
Spaghetti bolognese
Leeks/cauliflower in cheese sauce with bacon and crusty bread
Boiled gammon with onion sauce, mash and cabbage

Roast any vegetables you like (onion, garlic, potato and tomato are always in mine plus whatever is in the fridge) with fresh rosemary, salt and pepper. When almost cooked, put slices of halloumi on top and roast for 10 or so minutes. You can do the same but with salmon too. One pan deliciousness.

Just to lower the tone when mine were young they liked corned beef hash, unfortunately when I was told to make it I heard it as corned beef mash, so made potatoes, carrots and onion boiled , drain water off , add cubes of corned beef from a tin, mash together with little butter and milk. Serve withe peas/ sweet corn/ red cabbage or beetroot with lots of gravy. Kids loved it, comfort food and it wasn't until they were much older that someone pointed out it is HASH.😂😂
