Can anyone recommend a really quick, healthy meal for kid who goes to club

My child has just started a club and it’s pretty much straight from school (she’ll come home to get dressed quickly, then out the door). I work until shes back and I don’t have time to cook our evening meal before then. I can spare about 10 mins before she leaves. Any ideas for quick, simple and healthy meals to take with her?

I also work evenings so I only cook dinner at dinner time, cannot do the night before. Todays was rubbish, cheese and cucumber sandwich, baked cheese & onion crisps, fruit and some carrot sticks so was basically a lunch.

We have a club night like this. DS has scrambled eggs, beans and toast. Quick, healthy and simple!

We have scrambled eggs and baked beans on toast once a week.
Soup and a bread roll (though my DC don't soup)
Pasta, tomato sauce and grated cheese.
Microwave jacket potato (though the texture can be a bit strange)

That doesn't sound too bad. Does she need a full meal between school lunch and evening dinner? Pasta / rice salads that you could prep in advance maybe?

Can you put something in a slow cooker in the morning? That way you can just scoop out a bowl full for her.

I used to make a cold pasta salad for my DD when we had a quick turnaround and she had to eat in the car. Ten minutes wouldn't be long enough to make from scratch but if you were able to cook the pasta in advance and keep in the fridge you could just add some chopped cooked meat/ veg / cheese and stir through some pesto before she leaves? Or whatever ingredients really.

Can she eat dinner at school at lunch time and just have a packed lunch for tea in the evening?

If not how about something like egg fried rice (microwave packet of cooked rice with egg and peas, soy sauce, e.g.), pasta pesto - shove in a vented tupperware pot and take with her?

As long as she's meeting the relevant food groups it doesn't matter if it's hot or cold. Go for what she is most happy for that small amount of time. I imagine she wouldn't want anything too heavy anyway if she's dashing out to go to a club that could be quite active.

Porridge, pasta, or soup in a thermos mug (or pasta salad - pasta with some frozen peas chucked in for the last few minutes of cooking time, chopped cucumber and tomato, maybe some chopped cold chicken or ham and some pesto, dressing or mint sauce stirred through it).

Frittata freezes really well and can be left to defrost then reheated quickly

Pitta stuffed with cheese, hummus, salad

Please don't beat yourself up over not providing a proper dinner. A sandwich, some veg/fruit, maybe a yogurt and some crisps once a a week is absolutely fine. There is no rule to say that it has to be a hot dinner or you get sent to parenting school.

You could mix it up with pasta salad (could do it with dinner the night before), rice/couscous salad, flasks of soup or warm pasta, dips, dried fruit/nuts, chilli in a flask, quiche etc. if you wanted to but what you are doing is ok too.

Good idea! I’m so tight with time atm, everything feels like a military operation lol but I have seen casserole pre cut veggies etc so that could work. Also just googled and my thermomix doubles as a slow cooker 🙌🏼

I always do a quick sandwich or scrambled eggs on toast on quick turnaround evenings like that.

I don’t think what you’re giving her is awful, so I’m really not judgemental. But have you honestly got no more than 10 minutes per day to make your child something to eat? It doesn’t have to be made fresh on the spot. The way your post reads seems like she doesn’t get dinner at all, but surely she’s not doing the club 7 days a week? If she is then I’d cut back on the club if she doesn’t have time to eat properly in the evening

We have lots of days like this. Wraps are the easiest and most convenient to eat in th3 car. Just put some meat and salad in the Wrap, roll it up and wrapped with cling film.

  • Wraps with cooked (pre bought) chicken and salad, prawns etc.
  • Pasta salad is the obvious one as you can make it the day before
  • Nice rolls : tuna. Egg mayo etc.
  • cold quiche
  • Sesame noodle salad
  • Make a batch of (decent quality sausage meat) sausage rolls , home made pizza, home made chicken nuggets. All can be eaten cold
  • make some Flapjacks
All can have veg fingers, crisps, pots of fruit added.

A wrap with cooked chicken pieces, a spicy tomato and onion sauce with sweetcorn and shredded lettuce.

Buy those pouches of precooked rice - I used to give DS Mexican rice and add a bit of fried onion and chorizo sausage, chickpeas and passata with herbs. Takes about 10 mins to assemble and stays warm in a wide-necked flask.

Fresh tortellini or ravioli take two mins to cook in boiling water. Then toss them in pesto or a fresh pasta sauce with a bit of grated cheese.

Some ready meals are reasonably healthy - Waitrose or M&S curries are good.
