Meals to eat with 1 hand

FIL had a stroke and can only use 1 hand. MIL recently had shoulder surgery, so very limited movement to chop or cook. We've been taking a few home cooked meals plated up when DH or I visit- otherwise they eat frozen microwave meals!

My default has been sausages (which I've cut up), mash, peas, carrots and other veg, lasagne or cottage pie, but I need other ideas.

My very mild curry was apparently FAR too hot so ideally non spicy/plainish food ideas. Any other ideas?

I would be looking at things like chicken supreme, beef stroganoff, pasta bake, etc.

However, if I am honest, I would see if there is a Meals on Wheels service available in their area and how much it costs. That could work out more suitable. The food tends to be more traditional, and by the time you add up buying, cooking,and deciding on meals, that would suit much much easier.

Does meals on wheels exist still? When my ILs needed help with meals they were recommend to use Wilshire farm foods - chosen from a sort of catalog and ordered by phone frozen, microwaveable, seemed to be lots of things like fish or cottage pie that would be easy to eat.

soup and bread

Short pasta though, not spaghetti - I don't think I could eat that one handed.

@ErrolTheDragon I know of Wiltshire fine foods, but not sure they'd be any better/tastier than cook and M&S frozen meals? No meals on wheels nearby unfortunately.

Anything that you or he can cut up/break on the plate with a fork should be ok. I broke my shoulder and had to eat with one hand for about three weeks. It took longer but I could eat normal food. My mate next to me had a stroke a few months back and I know that jacket potato wasn't great as she always needed my help when that was served. But the 'wetter' meals seemed easier.

Things like casseroles and stews. Chicken and veg, Irish stew, beef stew
or Moussaka?
Mild curry like a korma or daal?
Mild chilli with rice?
Cottage or shepherds pie
Fish pie?
Tuna pasta bake?
Kedgeree?
White fish in mornay sauce with spinach and mash?
Scrambled egg with smoked salmon?

Ive been making my own soup and pouring it in a mug to drink with a sandwich on the side. My fave is brocolli and stilton, cream of chicken and vegetable....use leftovers from Sunday lunch. Lots of nutrients
