Very simple diced chicken dish

Hi all, I bought a giant pack (600g) of diced chicken when I was feeling brave. I have never in my life cooked chicken. Been a vegetarian for decades. I'd like to make something for the kids but it has to be quick, simple and fool proof. Oh and something that two non adventurous kids might like. Any ideas? I've looked up recipes online but I'm not sure how fool proof they are or if the kids would like them. I would like to avoid giving them food poisoning I'd possible

Also, it can't contain tree nuts. And nothing that requires overnight m.arinade as I need to make it tomorrow.

There is a bit of liquid at rhe bottom of the pack. It was in all the diced chicken packs in the shops. Is it OK? I took it out of the freezer yesterday night so it should be OK to make tomorrow, right? I think it says on the pack to use it within 24h of defrosting but I didn't have time today and today morning it wasn't fully defrosted yet.

You could make a mild curry.

Or use something tomato based like pasta sauce, bake it in the oven with cheese on top and serve with wedges, tastes like a pizza.

Do the kids like curry? A simple chicken and veg curry might work, brown the chicken with a small bit of oil, add chopped veg, mix some curry powder with water, MacDonalds is mild and popular here, stir in to chicken and veg, simmer til cooked, can chicken with a little cornflour if needed, serve with rice or chips. Was always eaten when my ds was young.

I do this with chicken instead of pork. I don't usually have any chorizo so I just add a teaspoon of smoked paprika instead. Leave out the chilli for the kids and the grown ups can add chilli sauce after it's cooked if they want: https://www.hairybikers.com/recipes/view/all-in-one-spicy-pork-and-rice

Even simpler option is to marinate chicken for half an hour in equal parts of olive oil, soy sauce and honey, then put on skewers and grill for 10-15 mins (turn every 5 mins). Serve with whatever you like, we have egg fried rice but you could just have pita or wraps and salad.

Thanks. These are great. They are not super fond of curry and dd can't have cheese as she is lactose intolerant. I have substitutes for other dairy products (like cream or milk) but not cheese as vegan cheese as revolting.😢

Also, freezer friendly would be great as it will probably be only the kids eating it.

This is a nice one, brown the chicken well in big chunks and then put in an ovenproof dish with par-boiled potatoes, garlic cloves, rough chopped onion, some herbs, cherry toms, lots of lemon juice and drizzle with honey then roast for 15-20 mins or til cooked.

Or chicken drumsticks- my children love these... chicken drumsticks lined up in a dish, baste with olive oil and turn then generously sprinkle paprika and garlic granules over all the surfaces of the chicken then roast for 45 mins to an hour. It's so easy and delicious.

I'd suggest chicken fried rice for a very easy first attempt. Best with pre-cooked rice but fine to do the rice same day just try and cool it a bit first.

Whisk 2 eggs with a little fish sauce (optional) in a hot wok/frying pan. Cook until almost set and set aside.

Fry off the chicken until cooked and set aside

Fry whatever veg you fancy for a few minutes - I tend to do a handful of frozen peas and sweetcorn and some chopped red pepper. Add the rice, egg, chicken and mix in 2 tbspn oyster sauce, 1 tbspn soy sauce and dash of sesame oil & speck of white pepper if you have it.

Tasty eaten cold for lunch or reheated (Asian friends assure me rice reheating fears are totally unfounded if you're sensible about it) and you can substitute chicken for any protein - prawn, leftover roast, tofu etc we have this most weeks in some shape or form.
