Ideas to get more calories in?

I've got a 12 week old, breastfeeding and worn out from carrying and bouncing him all the time. After birth I quickly got to several kg below my prepregnancy weight. The blood tests came back okay and since I've prioritised eating and been snacking more, I've stopped losing weight. But I'm so bored of the things I'm eating and it never quite feels enough. I snack on:
Flavoured nuts
Nice yogurts like Skyr
Belvita
Graze "oat boosts"
Crackers
Full fat milk
Chocolate digestives
Peanut butter on toast
Coconut water

What else could I eat that would pack calories in? I'm vegetarian and don't like eggs, which makes protein quite difficult and I already have so much dairy. I have very little time to prep food during the day but I can make batches of things in the evening if it doesn't take too long (I already make roast nuts).

Avocado? I have to bump up the calorie content of my little one's meals so often use avocado to do it.

I assume you have asked your HV or GP for advice?

-Add cream and or butter to mashed potato
-Add butter or olive oil onto cabbage, carrots, peas other veg
-Peanut butter or other nut butter inside a piece of celery to snack on
-Houmous
-Roast (not boiled or steamed) cauli florets till just going brown. Serve with a tahini/lemon dressing

When I was trying to boost my husband's calorie intake and protein after weight loss during a hospital stay, I made him milk shakes with fresh fruit. My sister, a nurse, told me to add a scoop of dried milk powder, as an extra.

Peanut butter is your friend here, as is decent yoghurt (5-10%) Greek, nuts and dried fruit
i ate so much trail mix when breast feeding (mixed up bags of nuts, giant raisins, chocolate buttons, salted pretzels) but you can buy pre-made bags.

Delicious bread with real butter and cheese - we find chucking part baked rolls in the air fryer for 5mins a lifesaver for ds1 who is very hard to cater for at breakfast time but will eat a warm roll with cheese!

switch cereal to granolas
switch to higher fat milk for the time being

When I had to do this (also breastfeeding and on my own during the week, due to DH working away and lockdown) I switched to full fat everything. Also tried to add full fat Greek yoghurt and/or a nut butter to everything when I had hands free to do so.
So porridge in the morning, stir in nut butter and add a dollop of yogurt once cooked. Chocolate digestive, add some Nutella. Having an apple, spread it with nut butter. If you like milky hot drinks, try a latte made with full fat milk as well.

When I was trying to retain weight during chemo, I had porridge made with double cream, and some chopped apples and sultanas. 😊
