Rescuing a sauce, too much linseed made it bitter?

Specifically, a vegan sauce/dressing type of thing that used a cup of sunflower seeds... didn't have any, subbed them for pine nuts and linseeds, about half a cup. Whizzed it all up (garlic, lemon, water etc) and it's lovely and thick, like mayonnaise, but it tastes really bitter!

Is there any way of rescuing it, please? (vegan options only, please!)

Something like white miso might give a bit of savoury depth.

Could it be the pine nuts? Some people taste them as bitter. Or they could be a bit old...

A few drops of maple syrup if you have it would work

I agree, add maple syrup

lifesabitchandthenyoudie · 02/01/2025 17:39

Thanks; it could have been the pine nuts...

I have some miso; don't have maple syrup but I do have coconut sugar... same job, do you think?

Would making it spicy work? What's the sauce for , is it instead of mayo?
There is a vegan board on here ( it's not the busiest)

CrystalCandelabra · 02/01/2025 17:40

Coconut sugar is good, that would work well

lifesabitchandthenyoudie · 02/01/2025 17:41

It might; vaguely saucy to go over roast veg, more than mayo; so spicy could work...

I'll split it and try two different tacks! Will report back 👌

Ok so that was interesting! Thank you for your input, all. I was feeling a bit stumped.

I'd made it yesterday, was really awful and I just left it in the fridge. Coming back to it just now, it didn't taste as bitter as it had done! However, it still did need sorting as it wasn't great. So I tried one half with a bit of sugar, one with some miso. Added some more water as it had gone very gloopy, of course. They both tasted better, but then I merged the two and I have a really nice sauce now! Also added a little chili sauce for good measure. Should be just the job!

All hail the power of mumsnet 💪

Thanks again
