Salads. Lots of veg. Stir fries? Baked potatoes. Anything simple with lots of veg - nothing too complicated to make, simple cooking such as baking, boiling, steaming rather than things which involve any complicated sauces, and uncooked food where possible (difficult if we get the predicted snow!). Nothing wrapped in pastry. Not much fat.

am excited to eat cleaner!

Tray-bakes are always my go to in January with chicken and lots of veg. We love broccoli pesto pasta and add meat of your choice or keep it veggie, flatbreads with toppings are also nice.

Oo tray bakes sound good. I like salads but if the weathers rubbish I find it hard to eat and no one else really likes them! So I've got, tray bakes, soup, jacket potatoes, pitta pizzas (for kids) ...... anything else?

Soup grains are cheap and easy to cook: just soak overnight, drain and boil before adding to any soup or stew. I like the mixed ones but we have lentils and pearl barley individually too. It makes a meal that you don't need to have bread with: for some reason bread and 'clean eating' doesn't seem to fit.
In January we always have a 'healthy and hearty' few weeks with lots of seasonal veg, pulses etc. The extra bonus is that it's cheap, so offsets the Christmas food bill a bit.

A favourite winter salad for us is a bowl of spinach leaves tossed with warm chopped warm beetroot, potatoes and mackerel. It hardly needs a dressing but a mix of crème fraiche and horseradish makes a lovely dip on the side.
Ratatouille is simple to make and is a lovely light addition to simple grilled meat. It feels zingy after all the fatty roasts over Christmas.

Eggs for frittata and shakshuka - pack both with veg.
Cauliflower and chickpea curry
Veg and bean chilli
Chicken breast, peppers, onions, cherry tomatoes for skewers
