When I send an email I want it to go into my sent box so I know I've sent it. Google won't help. Can you please?

One is an gmail account and the other is Hotmail

By date I think but if I have emails back and forth to the same person on the same day they show as if it was just one.

It sounds like you have conversation mode turned on - you can turn it off under settings. It'll display emails as individuals again - not grouped which it sounds like you are seeing.

That's conversation view, you can turn that off in settings if you want to see the individual emails

The issue must be with your device and/or settings, I can't see how an email provider would intermittentantly not save sent emails

I had the option to send to self I think and I didn't realise it was saved automatically and I was getting every email in the box twice. So I decided to change it and now I have none saved!

I have conversation list density set to comfortable. Is that what you mean?

I just sent myself an email from one address to another and it is not in my sent box on my iPad but is on my phone 🤯
