Easy dessert ideas

Please help...

I need to make a dessert for a family party tomorrow. My dm is already bringing trifle. I was going to make a pavlova this afternoon but we had unexpected visitors who stayed longer than I thought so I haven't really got the time or inclination.
It needs to be gluten and nut free, and I'm determined not to do the default gluten free brownies.

I have:
Eggs and the usual baking ingredients
A can of condensed milk
Some white chocolate
Oranges and clementines
Cream
A shitload of baileys, so if that can be utilised then all the better.

I'm googling, but if anyone has a fail safe easy peasy recipe that I can rustle up tonight or in the morning that would be amazing!

I know - I would definitely have done something ground almond-y otherwise, probably Nigella's clementine cake.

A kind of white chocolate and orange deconstructed cheesecake/mousse/tiramasu thing with gluten free crushed up biscuits all layered up in little glasses/verrines.
Although you don't have any gluten free biscuits.

The coeliac is ds's gf @JC03745 and although she really wouldn't mind if there wasn't anything I like to make sure there is. And I always do brownies, which I read on here somewhere is the most boring thing for coeliacs because it's all they ever get.

@KnopkaPixie this sounds good. I might attempt some little meringues (quicker than pavlova) and do a sort of orange posset Eton mess type thing.
I sort of wanted something more structured, as a contrast to sloppy trifle. Hmmm...Will keep googling

If you are going to crumble them up, you could try the old 80's favourite, 'Microwave meringues' for quickness. Make stiff royal icing balls, put on greaseproof paper or in bun cases and zap for thirty seconds or bit more, depending.

They puff up before your very own eyes and were a great favourite of DS as a small peep as they combined cooking, being a mad scientist, instant gratification and sugar.

These are all strawberry but the concept rings true. The glasses have to be tiny small then it looks elegant.

One of the most popular 'deserts: I ever did was to buy a selection of ice creams like Magnums, Mars, etc stick them in a bowl and get people to help themselves. Honestly it went down really well

I'd put grated orange zest through it as well as some of the orange juice. Melt the white chocolate in the Baileys to make an ice cream sauce. I've only used plain for that, but white might work.

Be conservative on the timings. They will re-inflate if a bit underdone but sticky sugar burnt mess is not fun unless you are four years old and can just walk out on the situation.

Caramelised oranges

Peel oranges with a knife, so that you break the outer skin of the segments instead of leaving them whole. Slice the oranges across the width so that they look like flowers about 0.5-0.75 cm thick. If the oranges are small, leave them like this. If they are large then quarter or third the slices. Put the orange slices in a shallow bowl. They can be heaped, but not deeply.

Find a recipe for caramel in your recipe book. It should be a straight sugar recipe, possibly with a little water as well. What you need to check (because I don't remember) are the amounts and the temperature.

Drizzle all the caramel over the oranges. Leave at room temperature until time to eat. The caramel will set and then gradually dissolve in the orange juice. The dish is delicious at any stage. Serve as is, or with liqueur or cream.

If you know what you are doing, or feel ambitious, make more caramel and spin sugar strands. Heap them onto the oranges just before serving.

DM used to make this in the 70s. It was a total show-stopper - but, secretly, her easiest dessert.

I agree @QuestionableMouse, which is why I always try to do something GF for everyone rather than something separate for her. The only exception is pasta, but always with the same sauce, and birthday cake.
