Boxing Day is cold cuts

and then a hash a day or two later

and then usually frozen to reappear in a gratin thing with leeks around NY

you could go Bridget jones and make a curry

We usually do a casserole with the leftovers as a couple of hours soaking in warming gravy being gently flavoured by chunks of leeks, swede, carrots, mushrooms and peas makes a world of difference to the dried up turkey. Served with buttery bread.

We haven’t got loads left but I’m making it up into coronation turkey and then making some rough puff pastry and baking it into pasties.

I make lots of soups with left over meat. Christmas tends to involve eating too much sugar and rich food and drinking too much alcohol, while taking little exercise.

Turkey & vegetable soups are a great antidote, warm, comforting, rehydrating, healthy, low in calories and easily frozen in portions to provide lunches through January.

Stew or curry. A stir-fry or pasta dish could work too, depending what you've got to work with (most veg can be used/hidden in these) - DC really liked a pasta dish I made recently with sprouts, mushrooms, broccoli, onion and cheese sauce. Most meats can be used as pizza toppings.

Delia's turkey and leek flan is delicious.
Turkey risotto.
Turkey curry.
Turkey in white sauce.
Have boiled up the carcass to make delicious stock which I'll use for turkey soup.

Risotto with mushrooms, peas, leeks....

Turkey and ham or turkey & sausage or turkey & vegetable pie

Turkey supreme served with rice

Turkey Caesar salad

Diced and stirred into couscous, add some Moroccan flavours, chopped soft dried apricots, flaked almonds, peas or mixed beans or chickpeas.

If you've got gravy available, make Yorkshire puddings, heat turkey in gravy, serve together with any available vegetables.

Make stock with the carcass to use in soups and sauces.

White sauce and mushrooms and served on vol au vent cases. We add chopped gherkins and serve with peas. You could add chopped gammon but me no like so good.

It's a family version of voucher a la reine I I guess

Sane mix would be good in a pie.

I’ll be stripping our turkey today. Carcass will be boiled up for stock, and at least some of the meat, especially little bits, will go in small foil packets in the freezer, labelled ‘turkey bits’. For stir-fries and various soups later, inc. a substantial mulligatawny (v good in cold weather)

Jamie Oliver has a good recipe somewhere for Turkey chilli, have made before and it was lovely - have a google.
I also do a Turkey leek and ham pie (I also have leftover ham) just with a white sauce and using puff pastry lid.
Turkey curry, obviously.
Find a recipe for chicken lasagne - we used one called "marry me chicken lasagne" and used the Turkey instead, it was delicious.
Use in pasta arrabiatta instead of chicken.

As others, we have a couple of different curries we make. Also reheated in leftover gravy.

I also (the years we have the bits) do a ham and Stilton potato gratin which also takes some turkey stock.

I often freeze a large chunk and the leftover gravy to enjoy a few weeks later on a winters night, with fresh potato and veg.

Reheat it with mushrooms in a creamy sauce to have with pasta, rice or in vol au vents.

Use some of the turkey stock you've made as the basis for an Asian style noodle broth, add turkey, noodles, gyoza, peas, broccoli, grated carrot, onion, garlic, shredded leeks, spring onion, spinach, peppers.....whatever is available. Season with soy, sweet chilli, five spice etc etc.
Quite quick to make, filling and comforting on a cold winter day!
