Boxing Day buffet sausage plait - no sausages!

Meant to be making a sausage plait with vegan sausages today. Scrumptious usually and easier to cater for everyone with the vegan sausages. Just realised that daughter has already eaten them so what else can I do? I’ve got left over veg, stuffing and pastry. Would a big mixture with added apple and added chutney work just as well? Help please!

That sounds fine to me and I’m not vegetarian, I would chuck some whole grain mustard in as well.

Sounds good. If you want sausages, though, and can pop out, supermarkets are open today.

Ooh the veg and stuffing version sounds lovely! I would put the apples but swap the chutney for blobs of cranberry

Love stuffing too but I'd go easy on the fruit as you don't want it to be too sweet.

Vegetables and stuffing is fine, or pop to the shop. Leave out the apple and cranberry so people can add it if they want - not everyone likes sweet food.

Maybe some Brie or Halloumi? I don't know which cheeses are ok for vegetarians but that's the way I'd go.

Thank you - great ideas here. Vegan daughter so can’t add cheese and the vegan cheese we have doesn’t really melt well. X

No cheese, just use what you already suggested (no apple maybe the chutney but with high sugar it can burn easily) just call it something fancy :)

Vegan and vegetarian are not synonymous!!

(Despite many restaurants and pubs abolishing vegetarian options, assuming that vegan covers both of those two different approaches to food)

Are you near any shops? Because replacing the sausages would be my first choice of action.

Like others, I'm not sure about adding apple. Do you have any tinned pulses?

Leeks and some nutritional yeast with the stuffing would make an approximation of Glamorgan sausage. You might not have either, but I have now fallen down a mental rabbit hole of what to wrap in pastry and am dreaming. Love pastry!

Add some extra fried onion and some tarragon to the stuffing. If you have any dried apricots, a small amount, finely chopped, would work well I think?

Cooked and devoured by all. This is it just out of the oven. Not quite as neat as usual as the filling was not as smooth to wrap. Also, oak milk wash does not offer the same sheen as egg white. General results- very tasty and in fact…a triumph!!

Left over parsnip, sprouts and carrot from Christmas Day
Roasted sweet potato and red onion with mixed herbs.
Mushrooms and crumbled left over nut roast.
Mixed up by hand and then spread in clumps over the pastry.
Served with stuffing, salad, new potatoes and lots of pickles and chutneys.
