Can you make roast potatoes in advance?

Or just peel them and then leave the potatoes advance

Peel them and leave them in a pan of water. I’ll be doing this tomorrow ready for Christmas Day, along with the carrots and parsnips!

We are a small household and a bag of potatoes is often too much. I usually par-boil the whole bag and do what I need to do with half of them. The other half I cool, then freeze in a bag with a good slug of olive oil. They then go right into hot oil to roast from frozen, probably I'd give them 10 minutes more than straight out the pot.

I part roast mine the day before if I'm catering for a lot of people (14 on Christmas Day). So parboil, toss in hot oil and roast until a crust forms but not much colour. Store in fridge overnight and then back in the oven for 20-30 mins when you need them.

Yes. That’s why how you can buy roast potatoes in the shops, on the fresh shelf or frozen. They’re all cooked before the point of sale.
