Red velvet cake..

Please share with me your favourite red velvet cake recipes! I have promised the family one for pudding tonight, I made a Jane's patisserie one a few weeks ago and it seemed very lacking! I plan on making a loaf cake version so please share with me some tips and tricks to get it super light and moist x

Made profiteroles instead for pudding, i find it very difficult to make a red velvet cake that isn't dry and bland!

I use the hummingbird bakery recipe and it’s always fantastic. Getting a good quality food colouring is really important. The ones you can buy in the supermarket aren’t good enough. The order in which the ingredients are added is really important too.

I made Deb Perelman's RVC for ds' birthday (tomorrow) for years and it was always very nice, but this year he wants a "sponge cake like the one from primary school".

I have been using a vegetarian Sainsbury's one, do you reckon the colours used in some of them are safe for toddlers/babies to eat?

Have you tried using baking spread instead of butter in the cake mix? I'm sure it was the Jane's patisserie one I did for dds birthday although i didnt add food colouring. I did it in 3 tins and made extra frosting.

I tend to use that recipe too.
agree that top notch quality red food is colouring is essential.
the last one I made I did a sort of “naked”’scraped icing round and some of the cake crumbs on the top. It was lovely and moist and not too sweet. Don’t be tempted to add any more bicarbonate instead sanded to the mix as it will ruin the taste.
