I’ve finished work today until 2nd Jan (whoop!!) I have 5 (nearly 6) year old twins. I’m in a terrible habit at the moment of fish fingers, chicken, pasta etc

I want to use the time that me & DH have off to do some serious meal prep.

one of my girls doesn’t eat potato of any kind so it’s rice, pasta or wraps for her. I don’t cook anything different as such for her, she will have what we have but the potato will be replaced by rice or pasta

I’d love your go to meals that always work and can be easily prepped

I'd make a tray (or 2?) of lasagne, divide it into portions and freeze and likewise for any hearty stews you like. I have a brisket recipe and a lamb shank recipe that freeze well so sometimes I make those in the holidays. We enjoy it the first night and I freeze the rest for later in the term.

Cook an extra big turkey and freeze the leftovers for later in the term? Curry them before freezing or add to curry sauce later? Similarly, have roast chicken one night but cook an extra large one so you can have the meat to add to sauces or wraps?

It's not a quick meal, but it's very easy to make crispy duck with pancakes at home and this can be a fun family meal. Roast the duck legs, buy pancakes (often in the 'duck' section of the supermarket) buy some cukes, green onion and hoisin sauce. (these are sold in kits but it's just as easy to buy them separately and cheaper too)

During term-time, for a quick dinner, I pan fry a pork shoulder steak/chop (9mins) and steam a green vegetable. You could add the starch of your choice.

At least twice a week I try to cook meals that can be doubled, with the extra portion frozen or kept for leftovers.
we like the campfire stew by pinch of nom (gammon, beans, peppers), which we have with crusty bread on a Sunday then with cous cous on the Tuesday or wednesday

we like spaghetti with lentil bolognese - I use the bbc recipe and make a mountain each time, which can be easily frozen

once a week we have nice bread toasted with avocado and fried eggs on top, with loads of chilli sauce (optional obv)

an easy one is roasting sweet potato wedges then having those in taco shells with sweetcorn, avocado, salad leaves, cherry tomatoes, cheese and sour cream. Let everyone serve themselves. My youngest used to just have taco shells with sweetcorn but now has the whole lot.

I batch cook Katsu curry sauce and then just add rice and chicken goujons.
Double up on this recipe and then for a family of 4 you need a portion of about 500ml-600ml

Can't get my head round it this year, I don't finish until Christmas Eve and I have no idea, so following. I'm not hosting this year so we won't even have leftovers.
