Boxing Day Lunch

Does anyone have any ideas for a Boxing Day lunch/dinner for 6 adults and 3 children?
Something that could be prepared on Christmas Eve, as I'm away on the big day, so that I can join everyone on a nice walk without being stuck in the kitchen.
It would have to be vegetarian, and the children all seem to live on pasta and pizza so I'd like to avoid those.

I heard someone talking about a Boxing day pie...it sounded tasty.

Simply put everything that's left over from Christmas dinner into an ovenproof dish, chop up left over turkey, add to the veg, stuffing, gravy....anything and everything, make a pastry top, whichever pastry you prefer, then put it in the oven till pastry is cooked....sounds good to me.

It depends if you want a set meal or more of a buffet type affair, hot or cold?
Something like this Leek, parsnip and mulled lentil gratin would work well and could certainly be prepped ahead.

Not veggie though and it doesn't sound as if the OP is home for Christmas dinner so won't ha leftovers but I am stealing this idea.

Boxing Day for me is a leftovers day and that's what I like about it so I would do something that emulates that with a buffet.

  • Bake at home baguettes, so there's fresh crusty bread that people can have big chunks of.
  • selection of cheeses
  • selection of pickles
  • potato salad
  • coleslaw
  • salads
  • boiled eggs

If there are any non-vegetarians

  • nice pork pie
  • nice scotch eggs (the ones where the yolk is a little soft set
  • chicken drumsticks - could serve these hot or cold

I often make a macaroni pie for Boxing Day, to have with leftovers/jackets/ salad/coleslaw. It’s much like macaroni cheese, but with added eggs, and baked, so it sets and you can cut it into squares. Always very popular!

I'd get a big rustic vegetable quiche from Cook!, new potatoes and salad. And crudetes. Yum.
