Why don't flight prices go down...

nearer the time on the less popular routes?

I understand flights to business hubs, via flight hubs, to popular holiday destinations and around certain dates will always be busy and thus airlines can charge accordingly. But if flying a less busy route why not drop the prices as the flight date nears and so fill the plane a bit more?

My evidence for this is merely me poking around flight sites whilst waiting. My life has involved a lot of waiting at various points.

Because people would wait as long as possible before booking, hoping that the price would drop further. The airline would prefer to know as early as it can that it has guaranteed passengers.

Also, there is money to be made in fleecing people who suddenly need an urgent flight somewhere and are willing to pay high prices for it.

Of course they would rather not fly empty seats, but they have reducing the price as the fight time gets nearer isn’t necessarily theor most profitable model.
