Strange question involving prison and orthodox Jews.

So I had a strange dream last night, I often have strange dreams but I woke up with this question.

What do Orthodox Jewish prisoners do when it is Shabbat?

Can they light candles? What happens with lights if they are automatic? Are they allowed wine?

I saw something where people were asking for Kosher food as it was better quality and/or individual meals frozen instead of being served from a big communal vat

There is a programme on YouTube where Gordon Ramsey is trying to set up a kitchen / restaurant / catering in a prison.

He has the idea of getting his volunteers to cook lunch for the prison, then he finds out how many options they have to make, it is about 6 or 7.

6 options, halal, vegi, vegan, 'normal' and I think there were two options for vegi and meat.

I expect it changes depending on who is in the prison.
