Help me with my fish pie please

I'm making a fish pie today for the first time - trying to break my boring rut of meals.

I have Tesco fish pie mix and a packet of prawns. I was planning on making a white sauce or should it be a cheese sauce? Then topping with mash.

Do I need to cook the fish first? Or can I just make the sauce, bung it on the fish, top with the mash and cook in the airfryer.

I don't want to poison my children but I'm worried if I cook the fish first will it go all weird?

I make a white sauce....butter, flour, milk...no cheese.

Add the fish pie mix and prawns...I also add a handful of peas

Top with mash. Grated cheese over the mash.

Bake until crispy and bubbling. Fish is always cooked through

I lightly poach the fish in milk for a few minutes and use that milk to make a white sauce. Lots of fresh parsley really makes it delicious. (added to the white sauce)
Lay out fish in dish with prawns, cover with white/parsley sauce and top with mash

Fish doesn't take a lot of cooking particularly when diced for a pie and put in hot sauce.

I poach the fish in milk, with a bayleaf and some peppercorns. When it's just cooked I remove the fish and discard the babyleaf and peppercorns. Then I use the warm milk to make either a cheese sauce or a white sauce with lots of lemon juice. Add the fish and sauce to the tin that you want to make the pie in, top with mashed potato and grated cheese (if you like it). In the oven/airfryer until the top is crispy.

I also use a bit of onion in the sauce and some lemon juice to take the 'sweetness' of it all back a bit.

Poach fish in milk and then cool
Use milk for white sauce
Cool white sauce
Mix fish, white sauce and egg
Top with mash or pastry (actually I usually wrap it all in puff pastry) and put in oven.

Yum!
(Cooling the components isn't vital but just improves it)

I made a Jamie Oliver one last night, not sure if this is the same but his sauce is made from mainly cream and parsley added to the sautéed veg and fish mix with cheese and lemon. Was delicious!!

Put the frozen fish pie mix and prawns in a dish and let it sit while you make a white sauce and add parsley and lots of seasoning. Pour the sauce over the fish. Cook in the oven for about 15 mins to give it a head start getting hot in the middle. Get it out of the oven and give it a gentle stir and add the mash , sprinkle with cheese and cook until golden and hot in the centre.

For a fishy fish pie, one third of the fish should be smoked.

Lightly poach the fish in milk with four black peppercorns and bayleaves. As soon as it bubbles, turn off the heat and leave to cool a bit. Strain the fish or remove with an egg slice and set aside in the fish pie dish.

Make a white sauce with the milk and add half glass of white wine or the juice of half a lemon. I stir in a small pack of peeled prawns, a tablespoon of capers and a couple of tablespoons of chopped parsley. Add the cooked fish and some twists of black pepper and a good pinch of salt. Give it a little stir and put it all in the bottom of the fish pie dish. I cover with foil and put in the fridge to cool fir several hours or overnight.

When nearly ready to put it in the oven I make the mash and spoon the warm mash over the top much easier when the fish part is cold and the sauce has set a bit. Bung in the oven fir 30/40 minutes, depending on the size.

I always add boiled eggs to my pie, a Delia Smith idea.._ You can omit these from the recipe, if you are not a fan of boiled eggs or eggs with fish

I make a veloute, which is basically a roux based sauce with fish stock instead of milk, with a dash of sherry( my own addition). Really easy.

You don't need to cook the fish first, but if you choose not to, bear in mind that it will release a lot of water as it cooks (particularly if it's frozen) and make your sauce thicker than usual to allow for it. If you cook the fish first then ad the cooking liquid to the sauce, this way round you get more control because you can see exactly what you've got.

The Jamie Oliver I use needs no white sauce faffing! It's honestly gorgeous and I'm surprised that the omission of the sauce doesn't spoil the dish at all.

I fry the fish in butter with seasoning and chives. Put prawns in last.
Then cover with lovely buttery chive potato.
It's a regular in our house!

No to cheese, not with fish, just doesn't mix in my book! I poach for a minute in a little milk remove fish, make a sauce with the milk, shallots, creme fraiche, corn flour, oregano and dill add fish back top with mash and breadcrumbs mixed with oregano and slices of tomato

I use the tesco mix with prawns. I make a cheese sauce and add some chopped boiled eggs into the mix and top with mash and cheese.

I definitely add cheese to my fish pie sauce, it's really yummy. I know it sounds wrong but it tastes great!

I think there are plenty of different ways to make an excellent fish pie though; it's not something where there is One True Way.

I always use a cheese sauce and put a layer of hard boiled egg but I don’t use prawns as my husband doesn’t like them . I also poach the fish in milk and use that milk for the sauce .

Mary Berry's recipe does it for me.
Addition of hard boiled eggs is lovely.
Don't overcook the fish!

I use hairy bikers recipe. Yes you need to cook fish first (not too long) and re-use the milk for the sauce. I like to add spinach and/or peas to the pie as well.
