Best Christmas markets in Germany?

We haven't had a holiday for a good few years and money is tight, but I'm toying with the idea of a weekend in Germany in December, hoping to visit one of the big Christmas markets...any recommendations? It would be six adults including an 84yo, so ideally somewhere reasonably flat and easy to navigate! Snow would also be wonderful (I haven't seen any for more than ten years)

I’ve been to Christmas markets in:
Cologne (lovely place, cathedral off-the-scale astonishing, rained all the time)
Hamburg (visit Miniatur Wunderland while you’re there, it’s amazing)
Both good, Cologne has more to do and see of the two.
But my favourite so far has been Vienna - which I know is not in Germany but they still go in for all the Christmas market stuff.

Cologne - weather will not be 'Christmassy', absolutely rammed at weekends - like barely able to put one foot in front of another crowded
Munich - much higher chance of snow, more to do in the city, way less crowded

We found we rapidly got bored of Christmas markets - like bored after under 30 minutes bored. OK for a quick hangout and a hot alcoholic drink but other than that, they get samey very fast.

Somewhere with some kind of specialty market is better eg in Munich they have a whole section specializing in v expensive wooden nativity figures.

I enjoyed a day in Cologne going around the markets but I didn't buy much. It was all very expensive wool items or overpriced laser cut wood. There were gems amongst the tourist traps but really it's a food festival. There's a little train you get on that takes you around. It snowed too. One of the market areas is by the main shopping centre and I bought a lot there.

Hamburg was snowy and festive in December last year (though keep in mind that snow can mean slippery underfoot which might not be ideal for older adults) There are several Christmas markets too
