First week of DH , Dc and I trying to eat healthier. Ie meat and 2 veg Sort of thing. I have got to the end of the week, and I have:

Mango and coconut chicken, Mediterranean vegetables, Mexican rice

But I also have that I can't think of meals for
Sliced leeks
Asparagus
Peri chicken pasta salad pot
Spicy and smoky potato bravas (small spicy chunks of potato!)

Going along the "meat and 2 veg route" I was thinking maybe the sliced leeks with the spicy potatoes and some sort of pork or lamb?

But then I still have the asparagus and peri chicken pasta pot.....

Any wise ideas? :) which are much appreciated!

(For reference I have a sainsburys and waitrose by my work, and a lidl fairly close to home)

Assuming the peri chicken pasta and potatas bravas are already made, you’re a bit limited.
I’d do the potatoes and asparagus with steak or pork medallions, have the pasta on it’s own (for lunch if it’s not substantial enough for an evening meal) and use the leek as an ingredient for soup with some new ingredients.

Is the pasta pot a big family sized one or more of a lunch/side dish sized thing? If the former then I'd have it as is with a side salad. If the latter I'd probably eat it for lunch and make something else for dinner TBH, but if you really want to use it in the evening I would maybe make a small extra amount of peri-peri chicken (or I use a veggie protein but you say you want meat) and serve alongside your pasta pot, then some veg (probably the asparagus would go best, or you could buy some corn on the cob from the supermarket).

Leeks and asparagus are great side veg, I wouldn't do pork or lamb personally if trying to be healthy (not that pork or lamb can't be helpful but I'd think of as a once a week treat rather than an everyday dinner) - I'm currently a fan of leeks cut into chunks and roasted with a drizzle of oil, you could do that under chicken thighs or salmon fillets as a tray bake, with your spicy potatoes on the side? Asparagus is nice steamed so I might have that alongside maybe salmon parcels done in the oven and your choice of carbohydrate (some seasoned grains e.g. bulgar wheat or couscous can make a nice change from potato). Or sweet potato mash can be a nice addition?

I'd make a tortilla to go with the bravas; you could add both the asparagus and leeks if you wanted. If you want to use the leeks alone, maybe leek and potato soup with cheese croutons? Asparagus could go into a risotto, or else make some crepes and fill with asparagus in cheese sauce (possibly ham too if you like it).

Leek and asparagus would go nicely in a soup or risotto, with a salad starter using either the potatoes in a mixed salad or the pasta salad mixed with loads of crunchy lettuce.

Leek and asparagus risotto

You haven't got much to work with really.
