Lunchbox ideas for gluten free teen

Not coeliac but gluten sensitivity.
Ds has usually had baguettes and sandwiches but the gluten free bread doesn't hold well.
I don't mind baking any at home if they work well.
School will have an option of baked potato but I'm not sure what else.
He doesn't want to take any hot food so I'm looking for any ideas that I can put in a lunchbox please.

The gf wraps are really very good , we’ve tried lots of different types and then just fill with what you like . My coeliac daughter has chicken , cucumber and mayo wraps for lunch most days .

The Promise bread , if you want sandwiches , is very good and doesn’t seem to crumble . They are also better sized slices than most gf loaves . Most good sausages are gf so you could send them in cold , gf pasta salad is another good one .

The newish Warburtons pittas are good, hold their shape and split well. Warb's tiger loaf is also good and their seeded sliced loaf. Schar frozen dinner rolls are lush but are best eaten warmed and crusty. Most other GF bready offerings are grim.

DS is a coeliac and he likes most of the gluten free bagels. Also likes the genius farmhouse brown, I think it's called, and their tiger loaf for sandwiches. I also make gluten free sausage rolls, banana bread and various muffins and scones. He sometimes takes in pancakes or croissants too.

Much better choice in the shops now than there was 20, or even 10 years ago, so not everything has to be homemade if you are stuck for time etc. Obviously he has plenty of protein and fruit and veg etc along with these, but just ideas for the gluten free carb alternatives. Eggs are great but not so good for a lunchbox.

GF wraps are good and dn takes pasta salad, rice salad etc if she’s got after school
clubs as it keeps her fuller.

Then just the usual stuff that goes in any lunch box. My sister likes baking so batch cooks gf muffins etc and freezes them.

I find the gluten free thins from Aldi the best. Add salad/ ham etc. Or l put gluten free muesli/ chopped fruit and yoghurt into a lunch box..and a spoon!! The Deliciously Ella muesli is my favourite although it's expensive. Also like their bars if he has a smaller break.

El Paso GF soft tortillas are my favourite wraps, for both flavour and texture.

You can make 'muffins' with Doves Farm GF flour, coconut flour, or a mixture of the two (my preference), which can be loaded with all the food groups for a meal you can hold in your fist and eat cold. Effectively, any quiche filling. The liquid is soaked up by the flour instead of being encased in pastry. If he likes them you can make a big batch and freeze.

I'm GF, not coeliac so cross contamination not an issue, I eat a lot of rice and noodle based salads.

Sounds strange but rice cakes used as sandwiches works well for me - I like the crunch and it’s better than a load of ultra processed GF bread.

I do this without the four, really easy to cook a batch and grab from the fridge.

Not strange at all. Until I found those wraps, I used corn thins for exactly the same reason.

The ultra processed stuff does make me hesitate to be honest, but I don't mind it from time to time.
I just tried an oat bread flour recipe which was pretty straightforward but I'll have to wait and see how it holds.

Thanks for the wraps and breads recommendations. The bagels sound good.
