What to do with a whole roast chicken

I know I could feed a family and possibly the street with it BUT would like some inspiration as to what to do with the chicken I roasted before our plans for dinner changed last night and I ended up eating out.
Do I go simple and chicken fried rice. Or is there a recipe using cooked chicken that's a must ? I'm a bit funny about using it already cooked in case it goes dry and paranoid about reheating. Hit me with good ideas ?! Thank you 🙏

I would take it off the bones, freeze it into portions and then just have in sandwiches when you want, or put bits into a curry sauce so warm it through gently when defrosted so it doesnt go tough. You need to be more gentle with the breast otherwise it will go dry.

Or throw it in a salad, warm caesar salad

Roast chicken sandwiches the day after are the best.

Then my son will have the legs just 'as is' as a snack, I like the wings, and the 'proper' meat we use in wraps or curry normally (for the curry I also boil up the carcass to use as stock/bone broth and pad it out with lentils if we've already decimated it from the sandwiches)

Take it all off the bone and portion it up. You can stick it in the freezer so you don't have to eat all of it today. Just defrost before using and make sure piping hot before eating.

The breast can go dry if you reheat it so I would shred it and use it in something saucey - a casserole or a curry, just let it blip away and absorb the sauce so it stays nice and moist, don't boil it.

Legs are my favourite for sandwiches but also great for fried rice/stir fries/and obviously can also be used in casseroles or curry. I also like a pasta sauce with chopped cooked chicken in a tomato base with some cream cheese stirred through.

Wings are cooks treat though. That's the law.

Make some nice gravy, mix in a drop of port if you have it. Bake chicken and the gravy together wrapped in a foil parcel for 45 mins/hour, serve with some mash and veg.

Chop an apple into lemon juice, add some mayo and stir until well mixed, add chopped celery, big handful of salted peanuts, good shake of paprika, then gently stir in chicken breasts cut into bite sized bits. Serve with salad greens and crusty bread. There will be no leftovers. Freeze the rest for a curry next week

Quick Chicken pie. Cook loads of veg and add a can of soup for moisture, add the chopped chicken, put it in a dish and add a pastry top. Then cook or freeze for another day.

To be honest there wont be any left even if you just have it as snacks and some salad/sandwiches.

I have no idea how people think a chicken goes very far

I take it all off the bones and freeze in handy size portions. I then take it our to use for sandwiches, salad, curry, risotto or to put in the base of a chicken and mushroom pie. The carcass I put in the slow cooker with water, the onion and lemon that I stuffed the chicken with to roast and a couple of Bay leaves. The resulting stock I freeze for soups or risotto.

I chop (or pull) it up and then freeze it in portions. It doesn't take long to defrost and then I throw it into endless stuff - pasta, risotto, stir fry, fajitas, curry, pies.

Whack it into a stew. Peppers, celery, onion, stock, heat until the veg is done and the chicken won't go dry.

I hoy a Chicken in the airfryer every weekend and use it for midweek meals. Last week we had

Ds had Chicken ramen one day, I had lunch bagels 2 days.

I know I'll be accused of having a miraculous mumsnet chicken but there's only 3 of us and everything is padded out with other stuff!

I'd make a chicken Cesar salad one day, chicken risotto another day and make some stock.

Pasta Alfredo.

Asian style broth with noodles, chicken pieces, peppers, garlic, peas, broccoli etc.
You could make stock with the chicken carcass or use stock powder for convenience.

Chicken Supreme served with rice.

We love Chicken and Pea Risotto.

Fry some onions, leeks and celery. Add the risotto rice, and slowly add the stock. After about 15 minutes, add the peas and continue to cook until the rice is almost done. Add the shredded chicken and continue to cook until it is hot.

I'd do a warm chicken salad today,

Cut the rest of the meat off the bone and make fajitas on Wednesday evening.

Simmer the carcass and make chicken and veg soup to freeze for when it's cold and you need a quick & easy meal.

You don’t need to heat it up. Just carve it up into pieces and put in bags in the freezer to be eaten cold - sandwiches, Caesar salad, a bit at a time.

Cook some leeks, stir in creme fraiche, salt and pepper, some herbs, add the chicken. Put in a dish and top with puff pastry.

For all these to ensure the chicken does not go dry bung the cooked chicken in last and only cook for a short while in sauce

Chicken fajitas-
cook the onions and peppers in fajita seasoning (cumin, chilli , salt, bit of sugar)
Fold in strips chicken serve in warm wraps with chopped tomatoes, sour cream and chive and guacamole

Chicken pie
Chop bacon and leeks and fry, add chicken to pan and a glug of white wine then chicken stock - cook for about 10 mins thicken then add a bit of cream. Cool before putting a pastry lid on

Thai curry
Tin coconut milk, spoon thai curry past , kaffir lime leaves, white bits spring onion, garlic clove, grated fresh ginger, butternut squash or potatoes cook until squash is soft (if using full fat coconut milk add a little slaked cornflour to stop it splitting. Add chicken and chopped coriander. Garnish with green bits spring onion and chopped fresh chilli

Yuk Sung
Mince in food processor- celery, spring onion, mushroom, carrot, cooked chicken, garlic, ginger, cashew nut (easiest to do separately and cashews las as they clean the bowl. Bung in wok with some oil and lightly fry, add sesame oil, rice wine ( or dry sherry) and soy sauce- cook down a bit, Serve in lettuce leaf with rice noodles

That's exactly what I'm doing. Having a roast chicken dinner tonight, and the pie tomorrow.

Liking the idea of a chicken pie or a distort . Son is coeliac but could buy puff pastry topper. Ready soup that isn't gluten ridden is hard to get but cold do the leeks / creme fraiche and top.
