Home alone for 2 nights - what shall I have for supper?

DH is working, DCs at friends. What shall I have for supper? Preference for something dainty and on the lower calorie side as I am within a kilo of my target weight.

I eat pretty much anything and am happy to slave over a hot stove, or not, as the case may be.

I also have 2 nights alone. I am going the OPPOSITE way to you. Tomorrow I am having beef short ribs! I have some in the freezer and no one else really likes that kind of thing so I'm going to braise them and enjoy them and then freeze in individual portions for me another day.

I thought double freezing was a bad idea, I've never done that. Is it safe to do?

I've refrozen food once it's cooked no problem. Love short ribs, but so does DH, so that's off my menu. Am still vaccilating between beans on toast vs something complex, dainty and delicious. May end up with lovely picky bits. Oh decisions decisions.

Supper as a word makes me feel a bit sick. Probably having a mother that thought she was Hyacinth Bouquet...

Anyway, I'd have a Thai steak salad and probably the 3 for £8 deal from m and s. I'm lazy.

I would have something with prawns as DH is not a fan. Not sure what, probably simmering Asian inspired with noodles.

Or, like a few weeks ago when DH & DC went camping for a night, I had oven chips, chicken nuggets and frozen peas/sweetcorn. And a glass or 2 of red wine 😂

I'm only seeing this now.

Platter 1 night - lots of picky bits. Olives with your pre dinner G&T. Prawns in avocado (yes some fats but good for you ones). Hummus with carrot sticks rather than breadsticks. Cherry tomatoes. Maybe cheese or cured meats/salami if you need more.

Lamb koftas with lots of salad and hummus 2nd night. Perhaps with couscous with roasted veggies mixed through or some pomegranate seeds tapped over.

Totally fine to unfreeze raw food then refreeze it after it's cooked. I do it all the time. The cooking kills.off any bacteria I think so it's fine e to refreeze. We wouldn't have anything cooked in the freezer if I didn't do this.
