Ice cream in Italy - what is it?

Currently in Italy and enjoying the ice cream. I prefer the fruity ones but they're not creamy like the ice cream I know from home nor grainy like sorbet.
What are they and how are they made? Can anyone enlighten me?

Gelato - made differently from ice cream, the name can refer to anything frozen but the type you’re talking about is what would be typically known as gelato!

Thanks @babblingbumblingbandofbaboons so according to wiki, it's the air content that makes it what it is.
But how do they make it seem not dairy tasting-last night I had pink grapefruit and lemon gelato but didn't seem dairy based at all.

Gelato is normally made with skimmed milk, so the typical dairy 'creamy' taste isn't there.
