Baking for Scout Camp- Recipes Pls!

Evening.

Kids are going to camp on Friday and parents have been asked to send cakes that will be used for their suppers. There's about 30 kids going.

I have a day off tomorrow and quite like baking so thought I'd make a few different bits but I'm stuck on recipes as all my usuals contain nuts or chocolate (nuts banned and chocolate will melt!).

Tray bakes for sure.

Perhaps a marshmallow log.

I would do something like mars bar crispy because delicious even if melted a little.

Think about things that last well. I'm a Guide leader and when we have done week camps with cake contributions we sorted by how long they would still taste good. Long lasting options include:

Fruit cakes (the lighter ones rather than the heavy Christmas cake style are generally preferred)
Shortbread
Flapjacks (with raisins, chic chips or other fruit)
Brownies or blondies
Cookies

Shortbread - 3:2:1 ratio flour:butter:sugar add some vanilla extract. Bake for 15 ish mins off the top of my head.

Cornflake cakes made with golden syrup and cocoa instead of chocolate. I can't remember the ratios off the top of my head but it's something like 6 oz cornflakes, 4oz icing sugar, 4 tbsp golden syrup, 4oz butter, 6 tbsp cocoa. Melt butter, add sugar and melt more, add golden syrup, add cocoa, heat to just boiling stirring all the time, add cornflakes, mix. I will locate the recipe if you want it but I think that's right. Sift both the icing sugar and cocoa otherwise it ends up lumpy.

Honestly. I do this a lot. Don't over think it. Traybakes all the way. Make your life easier. Bake in a disposable tray. Zillions of variations online. There's also a pile of allergy friendly options out there. I recommend bakedbyclo.com if you want vegan/dairy free.

Traybakes often use coco powder rather than chocolate in the recipes too.

Except lemon drizzle - it's my nemesis, never comes out right and ironically it's my favourite!

Blondies traybake with dark choc chips last really well and taste like choc chip cookies.

Flapjack (mumsnet recipe with condensed milk) again lasts well, bonus if you add in pumpkin/sunflower/omega 3 seeds /dried fruit or choc chips.

My favourite biscuit cake. You can switch the dried fruit suggested for the same quantity of other fruit, more biscuit, Maltesers or anything that takes your fancy.

Just make a tray of chocolate chips plain sponge. Easy.

Or, even easier, send in 5 packs of basics jam tarts lol.

As a beaver leader I'd do crispy cakes with smarties (but with gluten free rice crispies and the GF Aldi smarties because then it's universal except for those allergic to dairy!) .

There's also fifteens or rocky road (minus the nuts!)

I did lots of cup cakes for camp provisions. Easy to share out. Not messy.
Chocolate, lemon, and Queen cakes are nice - they have a slight lemon flavour and raisins in.
