The perfect coleslaw

Are you a mayo coleslaw person, yoghurt, no onions, apple, radishes, grainy mustard, lemon juice or cider vinegar, coriander or chives. What makes a good coleslaw? I don't eat it often but the last few places I've had it, it was so bland.

Same but with a bit of grainy mustard and some honey as well.

A blog I follow has a great recipe - Taming Twins - very easy and tasty, although I tend to omit mayo as it is the devil and use sour cream instead

I do red onion, sweetheart cabbage and organic carrot, all grated in the magimix. Mix in homemade mayo and lots of cracked black pepper.

Just typing that, and some grated mature cheddar would be nice too.

I do grated carrot, shredded white cabbage, English mustard powder, s&p, a sprinkle of sugar and mayo. Sometimes grated apple too.

No onion because raw onion gives me indigestion.

Oh horseradish sounds good, personally, I love grated apple and radish, any cabbage, red onion, coriander, a bit of mayo, Greek yoghurt, cider vinegar, mustard and cumin seeds

I make it with carrots and white or red shredded cabbage, half and half mayo and greek yoghurt and some caraway seeds. Sometimes a squeeze of fresh lemon or orange or a bit of honey too. Sometimes grated apple, sometimes a few chopped walnuts. I don't think I've ever made it with raw onion. I want to try that now.

I usually just chop a mix of cabbage and any other crunchy veg I have and then make a dressing of mayo/yogurt/vinegar/mustard/honey etc depending on what’s in and what I’m eating it with. And maybe some nuts and raisins- a bit of sweetness can be very good.
Definitely not horrible gloopy supermarket tubs with far too much vinegar!

There's another thread on here at the moment about Americans not understanding the importance of butter on sandwiches. This is the truth.

But, as an American, I'm risking life and limb to say, British people do not understand coleslaw. More often than not, it's bland and claggy and has way too much mayo.

From my southern grandmother

Bring cider vinegar, some sugar, a bit of salt, some black pepper and a bit of mustard (I like coarse dijon) to a boil. Mix should be sweet and sour. Pour while hot over thinly sliced green and purple cabbage (carrot and onion optional according to taste). Leave in refrigerator a few hours, or, preferably overnight, stirring cabbage mixture into liquid a few times. When ready to serve, drain excess liquid and mix in mayo to taste, adjust seasoning.

Finely shredded white cabbage, thinly grated carrot and some finely chopped shallot.

Dress with olive oil and cider vinegar, sea salt and black pepper and leave it to marinade for at least an hour. Just before serving, stir in a good dollop of mayo.

Shredded white cabbage, carrot, white onion. Mix a dash of lemon juice, garlic, black pepper and a sprinkling of curry powder into good mayo and mix well. Add to the veg. Lush.

I like the sound of the pickled American recipe. Here is mine:

1/2 red cabbage, 2 big carrots, 1/2 red onion, 2 dsp white balsamic, 1-2 tbsp Hellman's mayonnaise.

Mandolin is best for prep if possible.
Thinly slice red onion and place in a mixing bowl with 1 dsp white balsamic and a few grinds of salt, and stir. Leave whilst prepping other ingredients.
Shred cabbage and either shred or grate carrots. Add to mixing bowl and stir or mix with hands until combined. Add Mayo wi tutu to taste and mix with a spoon until everything is well coated then add 1 dsp white balsamic and mix again.

My standard coleslaw is carrot, white cabbage and white onion with 1/2 mayo and 1/2 salad cream, salt, lots of black pepper and a sprinkling of mustard powder, all mixed up together. And then adapt it based on what I’m cooking and/or what fruit and veg I have in the house.

Carrots, cabbage, a very small amount of red onion, celery, apple, chives and home-made mayonnaise (unless my vegan daughter is around in which case I use Hellman's vegan mayonnaise)!

My grandmother and mother always salt their cabbage and let it sit in a colander for a while to draw the water out. Then squeeze and proceed with the recipe. If your cabbage is watery, most of the salt will run off with the liquid, but you won't need to add any to the final product. I've never bothered because I drain it after letting it sit in the fridge, so get rid of excess liquid that way.
