I need some inspiration please!
My husband and I eat a lot of fish but two teens are fed up with fish.
Husband doesn't eat meat.
It's all a total pain to be honest.

Tonight dc had a pasta bake because we all went out for lunch and dh and I were still full.
Tomorrow will be some kind of roast.
No idea about during the week yet, need to order Mondays food shop tomorrow and dh didn’t go to the butchers today but possibly:
gammon egg (got loads from the chickens to use up) and chips
prawn curry
aubergine parmigiana
And then I’m drawing a blank!
I aim to not have pasta/bread/rice/potatoes at dinner, I have either extra veg or salad

Honestly sounds like you should just do whatever you & the kids fancy and let DH sort himself.

Tonight left over takeaway curry from election night!

Tomorrow dh is working as is dd2 (only dc at home now) so I'll probably have a fish finger sandwich!

Rest of the week?

Gammon, mash and peas
One pot fajitas
Salmon, little potatoes and mange tout
Sweet potato curry

Then back to Friday so probably curry or maybe Chinese takeaway!

I'd suggest that HE think up some meals and gets cooking then???

I tried a keto diet a few years ago, a more extreme version of low carb, but the principles are the same.

-Almond meal/ground almond makes a great alternative to bread crumbs.
-Cauliflower florets baked till just browning are delicious. They can be mashed as a potato alternative, chopped fine as a rice alternative or the florets can be served whole as side with a lemon/tahini dressing
-shakshuka. I normally start with frying off chorizo for added flavour, but traditional recipes don't use it. I think its fairly low carb and definitely meat free (it has eggs though). I add a tin of chickepeas for added protein in the sauce.

Waitrose do some nice halloumi/harissa BBQ type kebabs which I think would satisfy DH's requirements!

I would though tell him he is cooking for himself!

Fajitas might work, with fish and meat options.

Not that warm here so I made curry today
eating out tomorrow

beef stew Monday (I already made and froze this)

tues - pasta pesto

Wednesday - probably something batch cooker eg bolognese

I’ve a grab bag (fajitas) I will do Thurs or Friday

I live by the batch cooking 🤣🤣🤣

I also eat a lot of fish...
Some of my fave non meat dinners are..
Veggie moussaka, using lentils instead of meat.
Pancakes! Cheese, mushrooms, or sweet with maple syrup, lemon, butter.
Pasta With mushrooms in a ricotta/cream sauce with spinach and parmesan
Boulangere potatoes with a couple of salads (finely sliced layered potatoes, with a bit of stock and milk and butter, covered and baked on a very low heat for 2 hours)
Egg and veg fried rice
Butternut squash and chickpea coconut curry (either Thai or Indian style)
Ratatouille
Halloumi and veg kebabs with pitta and dips
Mixed bean chilli and rice/ nachos
Big fat tortilla style omelette with tons of veg.

Vegetable stir fry with 15 different ingredients and cashews for protein.
Quiche and new potatoes - use a strong cheese to make it extra tasty.
Greek salad with feta and croutons made from a herby bread.

Some amazing ideas thank you.
I thought I would come back and update this thread to say that my husband has started eating meat again. After 6 years!!
We've all just a delicious homemade biryani and everyone enjoyed it and cleared their plates.
This is going to make life so much easier!

@GrannyWeatherwaxsBroomstick Here you go. I just add some grated cheddar with the butter and milk and then mash all together by hand as I don't have a food processor. It is a bit lumpy but the family don't seem to mind. Also the cauliflower mash version without cheese make a good cottage pie topping.
