Slowly going veggie - recipe suggestions?

Calling foodie MNers! I've gotten some great recipes here before so I'm looking for your very best, would eat any day, veggie recipes! I've been losing interest in meat lately and I don't seem to digest it as well as i used to (I'm 35 now, whoa.) I do like fish and eggs. I do the cooking for our family (husband and three year old) and they're pretty happy to eat whatever. I'm a pretty adventurous cook so don't be shy!

Thanks for any suggestions!

My go to's (quick and easy)

Sourdough toast topped with smashed avocado/cottage cheese, tomatoes, mushrooms, poached/scrambled eggs topped with spinach/rocket, sprinkling of celtic sea salt.

Steel cut oats or organic oats, almond milk, berries, chia seeds, cacao, organic honey, sprinkling of celtic sea salt.

Greek yoghurt with berries, sunflower seeds, bananas

It's lazy but I love sauteeing onions, peppers and firm tofu and adding a jar of korma sauce.

Last week I roasted butternut squash, and mixed it with cooked courgette, onions, peppers, mushrooms, and spinach and mixed that through pasta and bechemel, topped it with loads of cheddar and turned it into a pasta bake.

There's a great vegetarian & vegan recipe book called Green Roasting Tin I strongly recommend. Pretty much all in one pan, not reliant on "fake meat" and not a bad recipe in there from what I've tried! Also has realistic shopping lists, stuff you can get in normal supermarkets.

Delia has 2 veggie lasagnes I love -
roasted vegetable, spinach and 3 cheese, and a fabulous lentil / bean shepherds pie. I also love the burnt aubergine chilli on BBC Good Food.

I'm not vegetarian but I don't eat a lot of meat (perhaps a couple of times a week), mainly because it's expensive and I've just never been that fussed about it! I also do all the cooking and DH and DC are fine eating whatever. Some of my favourite recipes are:

Brown butter and walnut pasta (cook a nice pasta shape, orricciete or however you spell it works well). While the pasta is cooking melt butter in a pan until it foams and browns a bit, fry garlic, chopped walnuts, chopped sage, a bit of lemon juice and a pinch of chilli flakes in the butter. Drain the pasta and add it to the pan with the walnut and sage butter. Toss it all together, season and you're done.

I also like cajun halloumi pasta. Rigatoni works well. Cook the rigatoni, in another pan make the sauce which is fried peppers, onions, chunks of fried halloumi, add cajun seasoning, tomato paste, cream cheese and a bit of pasta water to make the sauce. Stir the sauce through the cooked pasta.

Fajitas work well made with a tin of chickpeas and a tin of beans rather than meat (we tend to use borlotti or black eyed beans.)

My go to is a bowl of sushi rice (I buy in big packs from Asian supermarkets) with edamame, whatever salad and/or veg I have and air fried marinated tofu, with a bowl of miso soup on the side. I eat it at least 3x per week.

if you’re still going to eat fish then you could have that instead of the tofu.

I also make vegetable and tofu Thai curries.

I’ve recently discovered a nice Indian curry base from Sainsbury’s. I normally find curry sauce from supermarkets unpleasant, even those kits, but this is actually pretty good. It’s called masala spiced cauliflower soup but it’s thick. I reduce it a bit further and add veg and paneer. I might also try adding lentils.

If you can be bothered, Korean friend cauliflower is amazing.

Quorn meatballs are nice if you have them in a tomato sauce. It’s one of the only fake meat products I like. The other one is Linda McCartney’s fake hoisin duck which is really good. I have it in wraps or Chinese pancakes with salad but you can also add it to stir fries.

I don’t like halloumi much but it works as a burger. You can also soak slices in buttermilk (make your own by squeezing a bit of lemon juice or vinegar into some milk and leaving for 10 mins) overnight which makes the halloumi really soft and not so salty.

This recipe was recommended on MN a few years ago and I made it. It's a staple now and I'm not veggie. Absolutely delicious!

This is also absolutely delicious. To be fair anything in the sun dried tomato cream sauce would be delicious! I just make a pan of the chickpeas and we have baguette for dunking.

Wow these are all great, thank you all so much! I'm definitely looking for the dinner/meal type recipes. We eat a lot of veggies to begin with but I for sure get into ruts when it comes to the more main courses.
