Healthy cheap work lunch ideas

It's getting to that time of year when I would like to eat lighter lunches at work. It would also be a bonus that they are on the healthier side as well. I don't want to fall into the trap of eating veg sticks and Houmous on repeat though....

Has anyone got any interesting but not massively expensive work lunches that they enjoy during the warmer months?

I make a sort of healthy pot noodle! Some soakable noodles, whatever veg I have in the fridge (grated carrot, beans, spinach, cherry toms, pak Choi). Some miso paste, some crispy chilli in oil, some tamarind. Take it in a soup pot and add boiling water at lunch time. Also I chop a boiled egg in if I’ve remembered to do one. Oh or leftover meat if it’s knocking around too.

I have this a couple of times a week and I don’t seem to get bored of it as the veg varies.

I just keep a load of salad stuff in fridge and make up some salad dressing at beginning of week. Then make a salad, add feta, left overs, or tuna, or canned beans and take into work. Usually add nuts or olives too. So carrots, red cabbage, red pepper.

if we are having roasted veg I’ll take the leftovers in with tinned or packet lentils.

I'll make a big bowl of something like cous cous then put a load of veg like cucumber and tomatoes into it. Maybe some feta, herbs, nuts, whatever you have really and make a lemon/oil dressing. It'll keep in the fridge for a few days and put in a small container for work. Pitta bread with chicken and salad leaves is also a go-to.

I usually have a sandwich for lunch with fillings such as hard boiled egg (no mayo) or a couple slices of lean ham or cheese and always with a side salad with vinegrette dressing. I round it off with a yoghurt or some seasonal fruit or both if I want to live dangerously. I find this fills me up and is (for me anyway) the most digestible lunch option.

If you get bored easily then you could make up a plain cous cous and change the ‘filling’ or ‘toppings’ every day. I like wraps, salads, salad sandwiches if I’m craving some bread

Bean salad;
Chick peas, kidney, beans, tuna, sweet corn, carrot, cucumber, raisins, red/spring onion, peppers, tomatoes, celery etc.
Just season and add a really good dressing.

It keeps you full for hours and is so cheap.

@BoundaryGirl3939 , that's a great idea I had never thought of that and we have a sushi press already 😀 have you found any non traditional sushi fillings that work well?

@DuchessNope, do you drain the noodles or do tou leave it as a broth kind of like a quick version of ramen?

@BigDahliaFan do you have any salad dressings that you could recommend?

@FieldsOfFlours weirdly enough I used to love cous cous, and then really went off it because I no longer liked the texture 😫 althoughif it was plain and I added things to it it might work better for me. Do you have any favourites to add to it?

@Sago1 I was quite keen to try some bean salads out, do you have any favourites?

I like a fritata/crustless quiche in the summer. Easy chop and change fillings for variety and keeps well in the fridge. I just serve with a simple salad or pickled veg.

I also do lots of different salads, chicken tikka, Vietnamese rice noodle, Mexican chicken with a sweetcorn, onion, pepper and lime salsa.

I cook pearl barley and then add veg of choice, feta, walnuts (lightly fried) lemon and olive oil.

Tbh we just make sandwiches or take leftovers of evening meals. Too lazy for anything else!

Sushi salad. Scoop of sushi rice, some grated carrot, other salad veg, some protein.

Tuna and chick pea/bean base with lots of salad veg mixed in.

Roast butternut, red onion and feta.
