Pudding and cake bakers - I need some advice about making a cherry clafoutis or similar

I'm not a puddingy person but every now and then feel I should make an effort and serve my guests something other than cheese & fruit.

As I have a bag of frozen sweet cherries lurking in the freezer was thinking of a cherry clafoutis - my question is can it be make ahead of time and warmed up?

I'm open to any suggestions for anything really, that doesn't involve food processors, cake tins, sundae glasses, etc. I want something that can be baked in a rectangle dish, for six people. Thank you Smile

I wouldn't do it in advance, but I'd consider making the batter, chucking it in the fridge, popping the cherries in the dish in advance to defrost and then combining it all to cook when you're about to sit down to eat your main course. It means you're not really faffing about with it when you're trying to sit down but it's doing its own thing. Because it's sort of custardy if you reheat it I think you'd run the risk of it turning into a sort of rubber frisbee.

A clafoutis is a really easy and impressive pudding to make. Yes, it can be made in advance and re-heated. It's probably best to make fresh though, but it will last if you want to make it the day before or earlier in the day.

Thaw and drain the cherries in a colander over the sink so that they aren't too wet. I put all the batter ingredients in the blender and blend. Pour over cherries in buttered baking dish and bake. Super easy. You may want to add a bit of sweetness (sugar) to the cherries depending on how tart they are.

Don’t drain the cherries over the sink, drain them over a bowl.

Tossing out the flavoured juices would be terribly wasteful when they can be added to a custard or to your clafoutis batter or … anything. Cherries and almond are another classic flavour combination.

Because I am a bit game, I wouldn’t be averse to refreezing the juices for another day. It’s only animal products I am careful with.
