Courgette recipes!

I have a courgette that needs using. It is a mighty courgette. Certainly enough for a couple of meals. (Me and DH and 2 Dcs who no matter what will refuse to eat it).

I usually do sweetcorn and courgette fritters or roasted courgettes with onions, tomatos, olive oil and oregano.

Other recipes welcome!

We grow and eat a lot of cousgettes
Favourite way is like stir fried rice - small chopped courgette replaces the rice
Onions, garlic,carrots,peppers, chilli, soy sauce, seasoning
Bung any protein on top - eggs, salmon, chicken, tofu....

Roast with butternut squash, red pepper, onion and a little Cajun seasoning, drizzle with honey 5 minutes before it's cooked

Courgettes make a great thickener for soups, they taste smooth and luxurious while being low carb.

I do a courgette gratin - tastes a bit like the innards of a quiche. Originally an Annabel Karmel recipe designed to appeal to children.

2 courgettes and a bunch of parsley.

Chop the parsley, slice the courgettes thinly (I use the mandolin on a box grater); cook the gently with a little olive oil to get rid of the moisture - that takes about 20 minutes.

Then mix that with half a tub of creme fraiche and 3 or 4 beaten eggs, put into a pan.

Dot the top with halved cherry tomatoes (cut face down) and dust with parmesan or whatever cheese you prefer.

Bake at 190 for about 20 to 25 minutes until set.

Nice hot with crusty bread, also excellent cold.

I like to roast chunky slices in the air fryer with garlic granules and chilli flakes. Before doing that I sprinkle plenty of salt on the chopped courgette in a colander to bring out the moisture and dry well with kitchen roll. Leave it with the salt for as long as possible.
While it's cooking I boil orzo, add some garlic and herb cream cheese and lemon juice. I add quorn pieces but cooked chicken would work as well and then stir through the roasted courgette. It's one of my favourites!

This recipe is delicious! So simple but just heavenly - and add crusty bread if you want it to be a bit more substantial, as is it's a lunch or a light dinner.

Are you sure it's a courgette and not a marrow, if it's that big?
I had stuffed courgettes when I was in France, years ago. They were stuffed with some kind of meat and I thought they were delicious.

I stuff marrow and bake it and that is also delicious! I use beef mince, finely chopped onions, garlic, tomato puree, herbs and bovril, in roughly the same quantities as if I was making a Bolognese sauce but with tomato puree instead of fresh/tinned tomatoes and less of it. I peel and halve the marrow lengthwise, scoop out the seeds and fill both halves with the mince mixture. I then put the two halves back together and wrap tightly in foil, before baking in the oven. Probably at about 180 degrees for an hour or so - it depends on the size of the marrow and may well take longer. You could do that with the courgette? Fill it with something tasty and bake. If the courgette is big you will probably need to peel it but it you think the skin is tender enough you needn't bother.

I serve mine with mashed potato.

I also developed a courgette lasagne when I was low carbing.... Using courgette in place of the pasta. It works but it's quite sloppy. I prefer it with pasta!

Split in half lengthwise, scoop out the seeds and brush with oil, roast for 10 minutes and then add a filling of choice. We like chicken in a tomato sauce,lots of onion and garlic, bit of smoked bacon, mushrooms if I have them. Cook then pile into the courgette top with cheese and continue to roast until the courgette is tender. We like it with chips

Chop and fry with mushroom and onions, lots of black pepper.
Add a tin of tomato and tomato purée.
Add cooked pasta and stir through a ton of cheddar cheese.
Add pancetta if you want meaty.

Oooh these all sound good!

I think it's a courgette though I did say to DH 'Look at my courgette!'. It was sold as one by Mr Aldi.

My mother used to make a courgette and walnut cake which I really loved. Might look at that. Or stuffed.

Just remembered that during my vegetarian years I used to do a tempura courgette. Not sure why I forgot about that....

Hello fresh recipe. Fry italian sausages with the skins removed and break them down with a spoon so they crumble like mince. Add a chopped onion, garlic and finely diced courgette. Fry until cooking then add chilli flakes and tinned tomatoes or tomato frito. Serve with spaghetti.
Note: my veg hating teen is aware therecare courgettes in this but it's one if his favourite meals

I fry grated courgette in butter with garlic, salt and pepper, add large prawns near the end, and then serve with pasta and Parmesan.

Sauce for pasta.

Cook up the courgette any way you choose - I tend to chop it up and fry or bake with olive oil and garlic. Blitz in a blender with salt, pepper and some cream or soft cheese spread - I like the Vintage Seriously Spreadable as it has more flavour. If you like Thai food a few spoonfuls of red or green curry paste give it more oomph.

Sprinkle with parmesan cheese as you serve.

I use a veg peeler to cut long thin strips then marinate them in either ginger/chilli/soy/garlic or garlic/lemon/herbs and use in place of carbs with something like a Buddha bowl, stir fry or with a piece of fish.
