Vacuum packed beetroot- idiot seeks help!

So in an endeavour to eat healthier, I’ve been buying vacuum packed beetroot. How do you store the beetroot once opened to avoid spilling the liquid and it going everywhere and to prevent the beetroot going off (mouldy) before you manage to eat it all? I do store it in the fridge. TIA

I keep it in a glass (because it will stain plastic) storage Tupperware type tub, it doesn't seem to go off!

I also don't keep the juices out the packet, I drain it chop it and put it in the storage tub.

I just drain and put in plastic box in the fridge. You do need to use it quite quickly though.

Glass storage tub is my preferred route as well but I also struggle to use them quickly enough.

I have a small pyrex dish with a lid. I put beetroot in there, with the biggest ones cut up if they are like cricket balls and the lid won't close.

It does stain plastic but I use a glass container with a lid or just a small dish with a saucer over the top, you need to use it in a few days, you could add vinegar-I use white to cover this will keep fir ages then, add a little sugar if you like but I don’t I like the vinegar taste

Open the pack, take out what I want and then pop the packet in a bowl in the fridge to catch spillages.

You could freeze some when you first open the pack, if you know you're not going to eat it all at once. Split it into the portions you normally eat and pop them in a freezer bag.

I drain and rinse them then put them in Tupperware in the fridge.

Open the pack with scissors whilst in a bowl. Take out what you want, leave in the fridge.

I just tip everything (including juices) into a plastic airtight container and keep it in the fridge. No issue with staining the plastic over here.

This is what I’ve been doing then couldn’t eat them all one week and they’d gone grey after less than 8/9 days I assumed it was because they were not submerged in the liquid.

So much easier I agree, but I thought the raw beetroot was probably that little bit better so was trying the shrink wrapped ones as a next best alternative.

I find they go mushy once frozen ( perhaps because they have been slightly processed in the vacuum packing?’)

They are alright for soup then but not to eat ‘raw’

Usually 4 in a pack, grate two, chop two. Mix greek yoghurt, a squirt of mayo, black pepper, garlic (crushed) with the beetroot juice then add the chopped and grated beetroot, squeeze off lemon if you want. Eat it with/on everything. Keeps in a tupperware in the fridge for 4/5 days.

Sounds delicious and I’ve been trying to find quick easy things to make both with beetroot and the Greek yogurt I bought. I was thinking to just add the Greek yogurt to pasta for a quick tasty meal but have been trying to find what else so thank you.

I make houmous with it. Loads of recipes online for beetroot houmous.

It's basically the same thing in a jar and a vac bag - both are precooked, it's just than the jar ones are also pickled.

If it's taking you 8 days to eat a vac pack, then just buy a jar. Nutritionally, there's negligible difference.

I imagine it would be pretty grim frozen/defrosted.

If you're using it in salads, you could always buy it raw and grate it.
