What oil do you fry on a high heat with?

Vegetable and seed oils are apparently not healthy. We like extra virgin olive oil but this apparently is not good for frying at a high temperature (it's also very expensive). Has anyone found a good oil to cook at high temperatures with?

I think regular olive oil is fine at high temperatures just not extra virgin. It's cheaper too.

As olive oil is so expensive now I've just bought a bottle of cold pressed extra virgin rapeseed oil, which is supposed to be just as good.

But maybe not for frying at high temperatures!

avocardo oil.

I mean, frying itself isn't exactly healthy 🤷🏼‍♀️

We tend to use rapeseed oil. Olive for bread and salads chiefly.

Olive oil. Not extra virgin, that's suitable for dressings.

Avocado. Not oils, but ghee and tallow.

I just use normal olive oil, not extra virgin.

It is a myth that you can’t fry with extra virgin olive oil—in pure form it has a very high burning point and is one of the best oils for frying. Unfortunately most of the “extra virgin” olive oils sold in supermarkets are cut with cheaper oils and smokes.

Personally I order boxes of extra virgin from a small grower in Croatia and use it for everything including frying. Works brilliantly. It is 25 euro per bottle and I get through about 12 bottles a year.

I use goose fat for roasties.

Makes the best tasting roast potatoes

We normally use rapeseed oil for chips, eggs etc and coconut oil for stirfrys or similar

I use rapeseed at hottest temp for lovely roast potatoes. Rapeseed also gives potatoes a lovely golden colour.
