Gluten free chocolate cake recipe

Does anyone have a really good recipe for a gluten free chocolate cake please?
Mine all tastes dry but I need to make one for a birthday cake.

When I first started having to make gf cake for my daughter, I used to make a chocolate and courgette cake which was amazing! I can't find the exact recipe but there's loads online and it was never dry.

I do all my baking GF as DS has coeliac. I just use standard recipes and replace flour with GF flour plus a teaspoon or so of xanthun gum and then a little bit more liquid than the recipe asks for. Cakes always come out really nicely. I usually use Nigella recipes for cakes. Her coca cola one comes out well as already has quite a lot of liquid in the recipe

I just did the above best ever becky excel one and it was yummy. So moist!

I was a bit unsure about the ingredients as its not the normal recipe for chocker chocolate cake but it was so good. You wouldn't have even known it was gluten free.

The Nigella olive oil cake is divine, I make it regularly. I serve with orange blossom creme fraiche - mix in icing sugar (check it is gf) with orange blossom water and it’s delicious.

I make the BBC one all the time and just add a bit more milk to the mix. I also mix the sugar and butter until it is really smooth and creamy and this seems to help.

Let me give you some tips.

Much will depend in your flour. A mix of mostly carbohydrate with some protein will be best. If you are ok with almonds or hazelnuts, a spoonful would be good, too, as they are both moist in texture. (NB ground hazels in your choc cake is divine).

Make your cake as normal and allow to sit for half an hour at a minimum. This is essential. Longer is ok. Gf flour absorbs liquid differently from wheat. When you come to cook, add more milk if you think it is needed to make a pourable batter rather than something more like a paste.

Cook a little lower and check at the normal time. Put it back for a 5-10 minutes depending on how it looks.

Allow to sit for a few minutes before turning into the rack. Slice when properly cold.

This was my go to for many years and I can make it quite well these days. I didn’t bother with the extra soda - I just used plain gf flour with 1/2 tsp bicarb and 1 tsp creme of tarter. Vanilla instead of cinnamon. And I use rice milk. If it doesn’t bake properly (and collapses in front of your eyes) relabel it as chocolate fudge cake. Trust me.

A really quick one that I make regularly is a Nutella slice which is simply:
275g Nutella
70g g/f SR flour
2 eggs
Beat this all together and sprinkle the top with choc chips or chopped hazelnuts.
Bake in a 7x11in tray at 180C for about 20-25mins.

All these freeze well cut into slices so you can always have choc cake handy 😀

I had dense and crumbly gluten free cakes until I started beating the egg whites first like a chiffon cake, it’s made a world of difference and all my gf cakes are now lovely and soft

seems to work for any cake recipe, just swapping out the flour for a gf variety (doves farm self raising is very good)

I've used the recipe where you weigh the eggs and use the other ingredients the same weight and it's never dry. I use gf flour. It's a great recipe when you need to make different size cakes , as it's easy to adjust.

This will make 6 inch cake ×2
3 eggs- crack and weigh ( for example they weigh 140g)
Gluten free self raising flour 120g
Cocoa powder 20g ( the cocoa needs to be from within the flour quantity)
140g caster sugar
140g vitalite

Mix all together and put in greased tins. I cook at 190°c for about 15-20 minutes.
