Anyone ever reversed/lessened food intolerances as adult?

I'm curious to know and perhaps gain some hope.... I've been gluten free for a while now and it's been annoying but my menopause health has massively improved. Then after 4th covid last year I got post viral arthritis, really triggered I think by eggs, alcohol and soy and I think something else that I can't pinpoint. And this is too much.
I no longer enjoy eating/drinking out. I either sound massively uptight and face lots of comments or an evening of joint pain/itchy eyes/morning diarrhoea. And my at home diet has become pretty limited. I feel rather hopeless, isolated and depressed by the whole thing. NHS could not be less interested in it and I currently can't afford to investigate privately.
So looking for hope. Is it a matter of time for the post-viral stuff to shift. I'm becoming more socially isolated as a result sadly. Anything I can take, I'm on greek yoghurt rather than probiotic pills.

Following with interest. I developed food intolerances as an adult too. I’m trying to slowly re-introduce little tiny bits of the foods . Don’t know yet if it’s working.

No advive but lots of empathy. I have diverticular disease and virtually everything I eat hurts. I've just gone gluten free because bread is a bad trigger, but my body hates too much veg, fruit, I'm lactose intolerant now when I didn't used to be ... it sucks and it's either 'enjoy foof now, suffer later' or eat a totally bland diet.
I've tried the FODMAP approach but it didn't really make much difference, and have no idea what else to do!

Thanks for your replies - @Sonolanona divert.. must be hard! I also remain unconvinced by FODMAP and @SBHon do give us feedback!
I particularly miss chocolate😞So would love to be ok with soya again.
How do I repair my stomach???
I also wish more was known about this, to avoid the eye rolls in public. For whatever reason, there is a general belief that this is made up as the symptoms are so invisible

It takes the Feingold diet and goes further. Elimination diets are best undertaken with a dietitian for safety and structure.

I can’t say that you will get rid of your intolerances but it all may help identify and manage whatever your problems are.
