Less UPF, more veg, cookbooks?

We are eating the same food over and over again, not enough veg, and I want to reduce our UPFs. Really need some inspiration for some easy, healthy meals, I always find recipes online too fussy and would love to flip through a recipe book. Do you have any book recommendation that fit the bill?!

Try the River Cottage ones - I like the veg one. The freebie Tesco food magazine usually has decent family meals recipes including Jamie Oliver ones.

Look to bulk your meals with veg and pulses. Pulses vary - I like the ones that cook quickly.

The RC one I have is pretty much 3 ingredients and is quite good for finding ingredients that work together, and once I made my own hummus, I have no need to buy it.

We started this after Christmas, as we wanted to do the same and cut down on our shopping bills. I got lots of great inspiration from instagram, it doesn't always need to be fussy.

Meera Sodha's East is a vegetarian cookbook inspired from food across Asia and it's one of my favourites. The recipes are diverse, interesting, work well and are from ingredients which are mostly available at a large supermarket. Anna Jones' One Pot, Pan, Planet is also vegetarian and I've enjoyed everything I've made from it, and Melissa Hemsley's Feel Good is very veg forward and has been my go to cookbook for weeknight meals for the last few months and every recipe has been a hit.

When you say UPF free, I don't think I've seen a cookbook where UPF is an issue, barring those weird condensed soup ones from the 70s. You may get the odd stock cube or ready made puff pastry, or crispy onions, but I've not seen a cookbook where people wanting to reduce their UPF consumption would struggle.

I am currently using the Joe Wicks family cookbook, I don’t know why I’m surprised but there are loads of great recipes in there and we have made quite a few so far. There is a focus on increasing veg intake, less UPF and meals that all the family can eat.

Go Faster Food by Katy Percy is actually a really good cookbook; the version for kids has nice colour photos too. All cooking from scratch, no hard to find ingredients.
