Gluten/Dairy Free Meals?

Recently diagnosed with celiac disease & a dairy intolerance so obviously cutting them both out.
the only meat I eat is chicken, so it’s so difficult to find meals that include all these requirements.

Chicken curry and rice
chicken and tomato pasta bake (gf pasta)
carbonara (Tesco do a jar in the free from section)
lentil/veggie mince bolognaise/lasagne (gf pasta and free from white sauce)
bean chilli and rice/wedges/nachos
tacos - most kits are gf
risotto
chicken casserole
roast dinner
stir fry with rice noodles
jacket potatoes with beans/coleslaw/veg chilli/curry
egg and beans on toast
omelette
quiche made with gf pastry
pies made with gf pastry or from free from aisle (Asda have some nice ones in the freezer)
Moroccan chicken and gf cous cous (Asda) with salad
Cajun chicken and rice
gf breaded chicken from free from aisle (fresh or frozen) with chips/jacket potato/new potatoes/gf pasta

Do you eat fish?

When I started down this route (hardcore low FODMAP in my case), I started with a carb base - so a small portion of rice, or rice noodles, or potato, or Asda gluten-free pasta shapes.

Then I added a vegetable sauce, like a ratatouille stew (minus onion & garlic for me!); or maybe g-f soy with grated carrot, sweetcorn and brocolli.

Then some protein, eg cheese or a poached egg. (You could add chicken.)

I just sort of built from there, really. Cheese omelettes, tuna and rice with g-f soy sauce - lots of small amounts of chopped vegetables stir-fried to add.

Sympathy. It's hard enough having to deal with one issue without having both. Can you take (an enzyme iirc) something to buffer the lactose problem - I know that works for some people.

Otherwise resign yourself to reading the ingredients of absolutely everything. At least there are a lot of 'free from' options out there now, though many of them will only be free from one thing not from both.

Home cooking is generally not only best but also easiest once you're used to it. Eggs many ways. Some curries, many vegan foods. Tortilla, Baba ganoosh with g-f bread, chicken curry, chickpea stew, scrambled eggs with smoked salmon and saute potatoes, chicken Caesar salad with nuts instead of croutons.

The upside will, I hope, be not feeling ill all the time. That can be transformative.

@DeanElderberry not sure if not cous cous was in reply to one of my suggestions but I suggested gf cous cous from Asda 😊 I have coeliac disease and had it last night, it’s in the free from aisle

Agree with a PP about couscous, but quinoa is good in most couscous recipes, you just have to cook it first.

Make sure oat milk is GF as many oats are contaminated during processing (and some of us can't tolerate the protein avenin in oats which the body can treat as if it's gluten)

M&S Made Without range is mostly good, a few disasters (pain au raisin), and Cook frozen meals are tasty and clearly labelled so you don't have to take a magnifying glass to the back of the pack. They're expensive but good to have a few in the freezer and if you like one, you can always find a recipe to replicate it home-made www.cookfood.net/menu/main-meals/gluten-free
