Help with bland food ideas please

For medical reasons I have to have a bland, low residue, low fat diet for a while (hopefully not for ever!). I also need to avoid onions, garlic and anything spicy. I am struggling I admit!
I am very happy to eat white rice, white pasta, white bread and potatoes... but what on earth can I put with them to make them more interesting!

Low residue means no salads, uncooked veg, most uncooked fruit, no beans or pulses, no corn and no leafy greens.

Tonight I'm having a chicken breast and boiled potatoes, with apple puree for dessert. I like all of those things - but I couldn't live on them for ever! I had white rice with half a can of weight watchers tuna and tomato for breakfast, with a banana for a snack. A ham sandwich and another banana for lunch. Copious quantities of peppermint tea. I'm not hungry - but I want some tasty food! I

I know there are plenty of mumsnetters out there that have to be very careful what they say - do you have any suggestions? I have chicken noodle soup. I have fish fingers. I have skimmed milk and low fat spread. I have carrots and potatoes, and various other things in the freezer and store cupboard, so there are plenty of options to make things out of.

Roast some cooked beetroot, peppers and celery then blend to make a no-mato sauce for your pasta? Could also use it for a saucy chicken and rice combo.

Baked salmon and rice?

Egg fried rice. bullet up with some peas and chicken.

Roasted stuffed peppers with cous cous?

@beetr00 thank you very much. No I haven't, yet. Just trying to see if I can get things under control at the moment... combination of chemo after effects and antibiotic side effects! Hopefully not long term.

@Manyandyoucanwalkover fish pie is an excellent idea

@HeadsShouldersTitsandArse trying not to fry anything (or roast... added fat/oil). Can't have peas or any veg with skin on - shame because I love roast peppers! However given me ideas for no-fried rice and I might be able to cook and skin peppers.

Slowcooked pumpkin or squash or similar, without skin, until it's really soft, with some turkey breast and couscous ?

Could also add well cooked cauliflower, if that's allowed.

Seedless jam on toast, maybe not that great but probably not something you usually eat so at least it makes a changé.

Rice pudding. Risotto (with the ingredients you're allowed).

Omelette with potato or ham or cheese, or mushroom (if allowed)

Poached egg or scrambled egg on toast, boiled egg with fingers

Would pasta carbonara be OK ?

Cook the rice in a tin of beef consommé, it’ll give it more flavour and consommé id very low residue.
