GF sides for a Tagine

Hi ladies

I’m making a lamb tagine this weekend for some family - one of whom is celiac.

I was going to do cous cous as a side but I’ve just spotted that it has gluten in it !! Does anyone have some gluten-free side suggestions instead? I’m not used to catering for allergies so I’m really nervous about it !

Rice is gluten free. Wholemeal basmati works particularly well with tagine because it's got a slightly nutty flavour and more structure

You could make some gf flat breads. They're really easy. Or buy some, like pittas or something.

Amaranth or quinoa instead of cous cous? Both are pseudo-grains and gluten free

We normally do quinoa or gf flatbreads (gf flour + yoghurt) with a tagine. Rice works fine too, we just eat rice with a lot of other things too so like the variety.

Cous cous isn’t traditionally served with tagines. Usually you would have a tomato side salad and bread or rice. Rice would work well with a tomato or pepper salad. I would go for brown rice.

If the tagine calls for stock make sure the stock is gluten free. As a coeliac I'm quite nervous about anything that involves stock as I think it's something non-coeliacs could easily overlook.

@atlaz ohh yes thank you for the reminder - as someone without allergies it’s really eye opening how careful you have to be, gluten is in so many things that wouldn’t even cross my mind.

This. That's why I suggested gf bread. I don't think I've ever had couscous with a tagine in Morocco.
