Is my gammon off?

I bought a larger lump of gammon than I'd normally buy for Easter tomorrow. It was called gammon with crackling.

I've boiled it and now roasting it in the oven but there is an aroma coming from it. My son said it didn't smell nice when I was boiling it but I thought perhaps it was because it was much a much fattier piece than I'd normally buy.

I've just taken it out again to see how it's doing and I'm really not sure about it. The aroma is still there. I'm funny about meat in general.

Would it be normal for a gammon with crackling to smell?

I don't think you're meant to boil it if it's fatty

ShiftySquirrel · 30/03/2024 17:12

I boiled mine, then stripped all but a thin layer of the fat so no crackling for us, and finished the glaze in the oven.
Apart from a burnt treacle smell from the glaze (which is normal) it seems ok and I've tasted a bit too.

Definitely never smells nice when it's boiling though! I boil mine in full fat coke.

Taste a cooked piece from the edge. If it tastes ok it's probably fine.

Why are you cooking it tonight for tomorrow?

We only ever cook it in the day

Won't it be too tough ?

ohpumpkinseeds · 30/03/2024 17:25

Always smells rank when it's boiling. Does it have the skin on still? Usually if you want crackling you don't boil it, you just roast it with scored skin.

If it has skin and you've boiled it, you want to peel off the skin and leave behind a little layer of fat which will go a bit crispy in the oven.

BakedTattie · 30/03/2024 17:26

Why did you boil it?!

bloodyeffinnora · 30/03/2024 17:45

yes, mine's the same, I've tried a bit and it tastes weird, im going to spread with brown sugar and treacle and finish off in the oven, hopefully it'll taste better.
I always slow cook gammon in coke for those saying why boil, the meat is lovely and tender and falls apart.
maybe it tastes different because it's a cracking type?

What dates on it?

DuckDuckGoosieGander · 31/03/2024 00:42

Thanks all it was well in date. I was following a Jamie Oliver recipe - half simmer on the hob (sorry I did say boil but meant simmer) then in the oven to crisp up the fat. I removed most of the fat before it went in the oven. There was definitely something wrong with it and I ended up discarding and went and bought some more and the new piece was fine thankfully.

I've got 15 for lunch tomorrow and not enough oven space hence doing the gammon today.
