Roast leg of lamb tips, please!

Hello.

I've decided at short notice to host an Easter roast for my extended family.

Previously I've cooked an amazing half leg of lamb in our (big) slow cooker, but I've just checked and the full leg doesn't fit!

I really don't want to mess this up, but I'm not confident with roasting meat.

Any tips?

Jamie Oliver did the lamb joint on a bed of sliced onions, carrots and potato.....then the veggies were mashed and used as a gravy base. It's bloody lovely 🤩

It’s sounds too obvious, but I just follow the cooking instructions on the supermarket packet for rare and it always turns out great.

Before I put it in the oven I make some little slits all over it and push in half cloves of garlic and rosemary leaves. Literally no stress at all! Even if it does get a bit overcooked, you can slather it in gravy and mint sauce and no-one will know…

Poke holes with a skewer. Stuff holes with anchovies, garlic and rosemary. Cook on very high for about 20 minutes and then lower the temp to 160 for the remaining time. When you take it out of the oven, you will need to rest it for at least 30 mins - enough time for the roast potatoes to cook.

Times are from HFW - never failed.

I like Jamie Oliver's guidelines - I think it's 13 mins per lb plus 20 mins for medium. I make deep slits with a knife and push garlic and rosemary in. Use some halved onions and carrots as a trivet for the lamb and they'll add flavour for gravy. I usually use some wine, stock and a tablespoon of redcurrant jelly.

I used his recipe a couple of weeks ago and the lamb was fabulous.

It's a long time since I cooked for more than just me so I was quite nervous in case I ruined it but I didn't and my guests loved it.😄
