How do you make a decent omelette?

Mine never work out properly. What am I doing wrong? I love a really good one.

I always spray pan with fry lite. Fry off my fillings normally ham and mushrooms, tomatoes etc. whisk 3 eggs. Pour the mixture into the pan and spread out so th whole pan is covered. Sprinkle with cheese. Pop the lid on the pan for a few mins until the omelette is looking part cooked and stable enough. Flip omelette so it's a half moon shape. Press down to cook the egg through. Flip omelette over to make sure it's cooked. And viola. Mine always turn out good and we have one most mornings for breakfast. Some people finish theirs in the oven but I'm too lazy for that lol

If you've got a frying pan in good condition it's normally fool proof, but if it starts sticking, it's impossible, get a new one.
2-3 eggs, cook for a min or two, fluff with fork then add filling.

I've always found it works better to put fillings in first then add the whisked egg over the top. I don't add water milk or anything. I find it makes it too loose.

Similar to Sophie except I put mine under the grill to brown the cheese.

Melt some butter. When pan is hot, pour in lightly beaten eggs with s & p. Move cooked edge towards centre with a fork so uncooked egg moves to sides. Repeat until only the the top is still liquid. Fold as you tip out and the omelette will finish cooking on the plate.

If it’s sticking buy a new pan. Honestly even a cheap non stick will do the job. If filling need a bit of cooking get them in first (obviously not grated cheese! But things like mushroom, tomato, capsicum). Then whisk eggs in bowl (2 or 3). Add to pan. Moved the egg around a bit then leave it or it will be scrambled eggs. Add cheese if you want. When it’s mostly cooked flip in half to finish cooking. Slide out the pan onto the plate.

I have an omelette pan with a detachable handle I put under the grill to stop the bottom overcooking

  • Put the grill on and plates to warm wherever they warm (in hot water or in microwave if no spare oven)
  • Lots of foaming butter, hot pan, put your mushrooms / peppers / onions (whatever you’re having - just not cheese) in and fry them up
  • whisk your eggs, season them fairly generously and making sure there’s still plenty of butter frothing away in the pan, pour the eggs in and swirl so the mixture is fairly even
  • as the edges cook first (thinner), drag them gently towards the centre of the pan with a fork and swirl the still runny egg to the edges again.
  • when the bottom is cooked (cooked means it will slide as a whole when you give the pan a slight firm shake, like a pancake), then sprinkle your cheese and or ham on and slide under the grill
  • take out when bubbling and golden and slide on to your hot plate

I make mine like Halfway and they're always perfect.

I have a smaller pan, heavy base that I put a knob of butter in and turn up the heat. Whisk 3 eggs, add seasoning - and then fresh parsley. When butter is bubbling (but don't let it go brown), pour in egg/parsley mixture.

As soon as omelette is flipped over, add some extra mature cheddar and serve. We have it with wholemeal toast, it's a favourite here.

Exactly this. Fry lite, milk, or flipping eggs during cooking/putting lids on pans ... that is not an omelette. If you are making a filled omelette, you get it to almost-cooked, add filling to one side, and slide it out of the pan so that the unfilled side flips over the other.

If you mix the filling into the eggs, you're making scrambled eggs.

3 eggs, cooked in real butter.

Add any toppings while eggs are still raw.

I never flip my omelettes - I always stick my under the grill. They are always super thick and fluffy.

I think you need a new pan - make sure the oil is hot before you added the eggs

I make mine like the DuchessofPort, using the grill as well as the hot plate.
It rises so well.

Really hot pan .Then lightly beaten eggs (no frantic whisking!) 2/3 mins and dont leave unattended. I sprinkle some grated cheese and let that melt in mmm !
