What are your go to quick healthy meals?

My diet has been awful of late. Combination of being knackered, lazy, busy. But I am not sure a crap diet is helping my energy levels so decided today I need to get out of this rut.

I went to Aldi after walking the dog this morning and I have just made brunch.

Boiled eggs (not runny but not hard boiled, just the right combo of properly cooked white but still oozy yolk), avocado, raw spinach, picked red cabbage, with a bit of balsamic, lots of black pepper (sea salt on the eggs obviously), and tabasco. Yum! It also took minutes to throw together.

I have also got a load of vegetables, to throw together to make soup for easy lunches. I love soup!

Dinners are less of an issue, as we usually eat with the DC and so make sure these are healthy. It is mainly when I am eating for myself, either at work or on days I am at home and the kids are at school that I opt for rubbish. And definitely generally not enough fruit and veg in my diet.

I was hoping mumsnetters could inspire me with other quick easy ideas for lunches/breakfast/snacks!

I love a quick lunch salmon bowl! Salmon fillet, cut into chunks and air fried with chilli / garlic splash of soy or honey on, a portion of rice (normally do brown or a rice / grain mixture in one of those pre prepped bags) alongside some salad / kimchi. Normally takes 15 minutes including prepping + cooking and super easy to do.

I'm a big fan of lazy Caesar salads too, a salad kit bag with everything included (might tart it up with anything I have in the fridge too) then I'll just air fry (sense the theme 😂) a chicken breast or even chicken tenders, it's tasty and gets some good veggies in. Again only takes the time to cook the chicken, which you just dump and go so I can put it in when doing work and basically ignore it until it's done.

An easy favourite but not quick is roast pepper, courgette and red onion with cajun seasoning on. Then boil sweet potatoes, stir in a veg stock pot. Roast veg on a plate, top with the mash and a sprinkle of feta. I bulk cook it so can just put in the microwave. So tasty.

Noodles stir fried in a wok with whatever veg you fancy and some protein.
Takes minutes.
I love salmon, green beans and noodles. A bit of sweet chilli sauce on top is gorgeous.

I generally make sure I have a portion of fruit at breakfast, it puts me in the right frame for the day. Either muesli with some Blueberries, yoghurt and fruit or overnight oats (a favourite in our house is banana, dates, oats, milk, a little bit of cinnamon - mixed in a blender and left over night. Topped with extra chopped dates and Pecans in the morning.)

For lunch it's either soup (it freezes if you want to home cook your soup) or crispy tofu salad (basically whatever salad ingredients you have, some dressing and crispy tofu on top. You could swap the tofu for chicken). Spinach omelette is also quick and really filling.

I find that if I prepare my lunch in advance I'm more likely to eat healthily.

For dinner I like the ready cooked microwavable rice pouches and then add some veg to it. Leftovers are often good for lunch too. Or stir fry noodles and veg with satay or chow mein sauce.

Baked sweet potato...I do in microwave then air fryer to crisp up. I fill with tomatoes, either fresh or sun dried and some feta cheese

I use my air fryer for very quick and very healthy meals. I'll airfry/air roast salmon/halloumi and in the other part of the air fryer I'll mix greens (usually green beans,, mange tout and broccolini or asparagus) with a few sprays of garlic infused olive oil and then do 200c for 5mins, they come out crunchy, slighly charred and absolutely delicious - my 4yo will have greens prepared like rather than pasta.

Any unprocessed meat , boiled, stewed or roast, same for vegetables, rice, fish, yogurt, porridge and fruit. Take a recipe and do it when you have time

Yeah it freezes really well. I do 2 pepper, 2 courgettes, 2 red onions and about 6/7 smaller sweet pots or 3 giant ones and it does about 5 lunch sized portions.
