Panicking - undercooked chicken

If my chicken thigh was cooked through (I'm pretty sure, it was piping hot and juices were clear) but a bit tough I'm not going to have made my whole family sick am I?

It was still a bit shiny and rubbery. We stopped eating when I found pink inside one of my thighs.

I have health anxiety and just really really don't want food poisoning on top of this cold I have 😭

Thigh meat can be a bit pinky. If it was hot all the way through and clear juices it is probably ok. Not a lot you can do at this point anyway. Perhaps invest in a meat thermometer for next time for reassurance if that would help with your anxiety.

Chicken thighs often are a bit pink. It doesn’t mean they’re not cooked. However, I bought myself a meat thermometer & it’s the best thing I did as I always worried about cooking chicken enough and now I can know for sure.

How long did you cook them for? If they were piping hot and juices clear then it sounds like they were cooked properly.

They were in the oven for an hour. But went straight in from the fridge (I had prepped the pan earlier)

I know I am probably being paranoid. It was difficult to cut the meat from the bone and a bit rubbery.

It just this fucking intrusive thought now that won't go away since I cut into the second thigh.

An hour! It'll be well beyond safe. It's probably just rubbery because they've pumped a load of water into it. You have done the right checks and it's fine.

Get a digital meat thermometer. I've just replaced our annoying one for £7.96. Get one that says it's instant, it's less annoying to use.

I've had two bad bouts of food poisoning in the last 12 months (one takeaway and one prawn related)

And it's contributed to the worsening of my anxiety.

You'll be fine, an hour is ages. But eating chicken generally is grim, they live absolutely awful lives and my friend did get very sick on undercooked chicken breast once which led to other longer term problems.

Honestly don't worry this time though, thigh meat isn't white anyway you'll be fine ♥️

I'd say it was surely done after an hour but even worst case scenario and it was ever so slightly underdone it isn't an automatic given that you will get food poisoning from it, you can do if you're unlucky but not all chicken is going to have bugs. I agree with getting a thermometer, in fact I intend buying one for a friend as she insists on cremating all meat 'just in case' and then cuts it up into bits checking every piece before serving!

One thing I find really useful is a probe so I can check temperature on meat.
